Cheese and Chive Sourdough Biscuits

Cheese and Chive Sourdough Biscuits

Nothing beats a biscuit...and
Nothing beats a Cheese and Chive Sourdough Biscuit!
Paired with a steaming bowl of Smoky Gouda Cheese Soup....
Well, you can't beat that.


It's been awhile since I made anything with my sourdough starter.
When I recently made a big pot of Smoky Gouda Cheese Soup,
these yummy cheese and chive biscuits came to mind.

Cheese and Chive Biscuits go well with any type of stew or
any type of a thick, creamy soup.
These biscuits can be dunked and
dunked without falling apart.


Sometimes you want to crumble crackers in your soup or stew and
other times, you want nice fluffy dumplings floating on top but
we think biscuits are meant to be dunked and
scooped into soup and stews,
sort of like a thick slice of buttered sourdough bread.

Blood Orange Upside Down Cake


Recently,
while grocery shopping,
in the produce department,
I saw a huge white sign.
Written in big, red-orange letters,
were the words:
BLOOD ORANGES...Get them before they're Gone!
Well, I marched right over to the big cardboard bin and
I picked up two, 5 lb bags of blood oranges..
...before they were all gone...
I also picked up five, 16 oz bags of cranberries, for $.99 a bag...
...before they were gone too...


Once I got home and unpacked my groceries,
I said to myself,...Lynn....
"What in the heck are you going to do with all of these oranges!"
"I mean, you can only eat just so many oranges, right?"
So I decided to put on my thinking cap and I thought and thought.
Finally, a light bulb went on in my head....
"I'm going to make a Blood Orange Upside Down Cake"
I said out loud to myself.

I am so glad I decided to make this delicious,
Blood Orange Upside Down Cake.
The cake was light and fluffy, the oranges were nice and sweet and
the dark brown sugar/butter topping had a nice caramel, buttery taste.
I was super surprised at how tender and sweet the blood orange rind became...
It was very similar to 'candied' orange rind...
sweet, tender and bursting with a freshening, citrus flavor.
Perfect on a cold, blistery, winter's' day. ❆

Cinnamon-Honey Grapefruit

Cinnamon-Honey Grapefruit
A simple, yet satisfying breakfast.


Cinnamon-honey grapefruit,
served alongside a piece of buttered toast,
is sure-fire way to start day off your busy or
not-so-busy day.


When I was growing up,
grapefruit appeared often on our breakfast table.
My mom would cut the grapefruit in half,
cut around the inside, section the grapefruit and
breakfast was served.


I can't say that I really liked grapefruit back then but 
I did like all the sugar we dumped on the top.
I also enjoyed scraping my spoon down the inside of the grapefruit,
to make a sugary, sweet juice with pulp.


Now, I enjoy a honey, sweetened grapefruit, with just a hint of cinnamon.
Gone are the days of the over sugared grapefruit halve.

Baked Haddock with Creamed Leeks

Baked Haddock with Creamed Leeks

Haddock is very versatile and
can be substituted in any recipe where a firm white fish is called for,
making haddock one of our favorite fish to use in recipes.
Our favorite way to prepare haddock is: baked and
lightly breaded, deep fried and served with tartar sauce.
Of course, Baked Haddock with Creamed Leeks is at the top of our list of favorites.


Over the years,
haddock has made an appearance on our table many times.
We purchase haddock in 5 pound boxes.
The haddock fillets are: quick (single) frozen, boned, skinless fillets.
We get roughly 3 to 6 meals from one 5 lb. box of haddock,
depending how we prepare the haddock fillets. (per two people)
The cost for one 5 lb. box is anywhere between
$35.00 to $42.00, depending on the time of year.
During Lent, 5 lb. boxes of haddock are reasonably priced,
sometimes on sale for as little as $25.00 per box and
that's when I usually stock up.

If you do some adding, subtracting and dividing...
haddock becomes a very economical dinner choice.
Let's say you have a family of four, one haddock fillet,
divided in half, will serve 2 people.
Add a baked potato, your choice of steamed vegetable,
a dessert of fresh fruit with whipped topping and
you have a very inexpensive and good for you dinner option.


Haddock is best served as simple as possible.
This allows the mild flavor of haddock to shine through.
This recipe is the perfect example,
haddock fillets are lightly seasoned with dill weed and
lemon-pepper seasoning, then baked in a mixture of....
lemon juice, lemon zest, water, green onions and minced garlic.

A delicious mixture of cream, leeks and
Dijon mustard is combined together then
spooned over the baked haddock.
Baked haddock and creamed leeks is
absolutely delicious. It is one of our favorites,
and I hope it becomes your family's favorite too.


If haddock or fish in general isn't your thing, no problem.
Substitute the haddock with a grilled chicken breast or
you can do what we often do,
serve creamed leeks over a baked potato...
for a delicious 'vegetarian' option.

Mushroom Caps Stuffed with Shrimp


This fast and easy recipe is great served
as an appetizer or as a light side dish.
If shrimp isn't your thing, don't add it.
Smoked salmon, lump crab or finely shredded mozzarella cheese,
sometimes called 'fancy' shredded cheese, could be used instead.


Mushroom Caps Stuffed with Shrimp
are made with cremini mushrooms but
you could substitute white button mushrooms.
We prefer the meaty, earthy, taste of
cremini mushrooms in this recipe.


These little beauties are the perfect 'finger' food.
Pick one up and pop it into your mouth.
No plate required~

I've been making this recipe for as long as I can remember....
and at my age, when I can barely remember where I put my car keys,
remembering a recipe that I've been making for many years,
well that can only mean one thing, it must be a darn good recipe!

When making this recipe,
I like to use thick cut pork chops.
I tend to overcook thin cut pork chops,
making them dry, tough and
not very flavorful.

Blueberry Pie

This pie is as easy as 1. 2. 3.
Homemade canned blueberry pie filling plus
a refrigerated pie crust is all that is needed.
You can certainly make your own pie crust but
to save time, we opted for the refrigerated version.

Blueberry Pie
One thing though,
you really can't skimp on the blueberry filling...
We highly recommend making your own blueberry pie filling.
It really isn't difficult and the taste is pure heaven.
Next summer, when blueberries are in season,
go out and pick your own, (fresh is always best) or
when your grocery store runs a special on blueberries,
pick up a couple of cartons and
make some blueberry filling!

Blueberry Pie
The recipe given here Homemade Blueberry Pie Filling is for 1 quart.
I double the recipe and make 2 quarts of pie filling....
which is the usual amount we make....
We like to have 2 quarts of several different fruit pie fillings on hand such as:
blueberry, cherry, peach, blackberry, apple and pear-cranberry,
instead of having six of the same kind of pie filling.
This is our personal preference....
If you have a large family,
have access to large amounts of blueberries,
or you simply love blueberry pie filling and bake often,
by all means, make as many quarts as you want...hey
knock yourself out!

If you don't have any homemade pie filling on hand,
don't worry...
you can still make this delicious pie.
There are many wonderful brands on the market to pick from.

Mushroom and Blue Cheese Gougeres

Gougeres are basically cheese puffs or dough balls,
studded with a variety of ingredients.
In this recipe chopped mushrooms and
crumbled blue cheese are added to the dough.
Gougeres are delicious right from the oven or
served at room temperature.


An added entertaining bonus,
gougeres can be prepped ahead and
frozen on a baking sheet.
When frozen, transfer gougeres to plastic freezer baggies and
freeze until ready to bake.
Add a few extra minutes to the baking time,
when you're ready to bake the frozen gougeres.

Homemade Horseradish

Homemade Horseradish

A roast beef sandwich just isn't the same
without a smear of fresh ground horseradish.


Making homemade, fresh horseradish is super easy.
I was surprised at how little time and
effort it takes to make fresh horseradish.
It got me asking myself,
"Why have I been buying horseradish all these years?"


I bought a piece of horseradish root at my local grocery store.
I found it in the refrigerated section of the produce department.
I think I paid under $3.00 for the horseradish root.
Besides horseradish root, this recipe calls for 3 other ingredients,
white vinegar, sugar and salt.
You will also need pint size jars for storing your horseradish.
I always have vinegar, sugar, and salt on hand and
I have a ton of pint size jars so whipping up fresh horseradish
was going to be a piece of cake.


Since we don't use a lot of horseradish,
the 2 1/2 pints I made was plenty for us.
If you have a large family or
just want to make horseradish to give as gifts,
you will most likely want to double, even triple the recipe.
One word of caution.....
horseradish is very strong!
If you have a stuffy nose,
it will clear it up😊

If you are going to make a large amount of horseradish,
you might want to either do it outside, weather permitting or
in a well ventilated area...open a kitchen window or two.
