Beer Battered Smelt

On the Menu Today~
Beer Battered Smelt

What the heck is Smelt?
Smelt is anadromous, meaning that it migrates from its North American saltwater habitat to spawn in fresh water. It's a small (average 4 to 7 inches long) fish with a translucent silver-green back shading into shimmering silver sides and belly. Its delicate flesh is rich, oily and mild-flavored. There are many varieties of this fish, the most widely distributed being the rainbow smelt, found along the Atlantic coast. Fresh smelts are best from September through May. Because they're very perishable,  many are now flash-frozen immediately after being caught. Smelts are marketed whole and are usually eaten that way-head, viscera and bones. Though they can be prepared in a variety of ways, they're generally simply coated with flour and fried.

An anadromous fish is born in fresh water,
spends most if its life in the sea and
returns to fresh water to spawn.
Salmon, Smelt, Shad, Striped Bass and
Sturgeon are all common examples.

Pickles, frog legs, cheese curds, mushrooms, zucchini,
doughnuts, fritters, hush puppies, the list goes on and on....

Oriental {Coleslaw} Salad

On the Menu Today~
Oriental Salad

Oriental (Ramen Noodle) Salad
has been around forever...
There are many different variations of this salad,
some use chicken flavored ramen noodles, others don't.

We prefer to use the oriental flavored ramen noodles, if you can find them.
We like to use almonds in this salad,
but cashews make a great substitute.

Oriental Salad is not only delicious and easy to prepare,
it's one of the most economical summer-time salad you can make.
This salad can easily be thrown together for under $5.00 and
can serve between 4 to 6 people.
Not too shabby~

Tomato and Basil Topping for Bruschetta

On the Menu Today~
Tomato and Basil Topping for Bruschetta

Tomato and Basil Topping for Bruschetta
is one of the best ways to showcase summers
bounty of fresh, garden ripened tomatoes.

This topping is best made with plum tomatoes,
which have more meat, less watery juice and fewer seeds.
Tomato and basil topping requires juicy, sun-kissed,
garden fresh tomatoes in order for this recipe to shine.
Now is the time to make this delicious topping....
when tomatoes are abundant.

Tomato and basil topping is best made
several hours in advance and
allowed to sit at room temperature.
This gives the flavors enough time to "marry."
