Tomato, Basil and Mozzarella Salad
Simple and always delicious,
this classic salad is the perfect summer-time
salad that showcases vine-ripen,
garden fresh tomatoes..
Besides a BLT,
this is our favorite ways to enjoy summer-time, fresh tomatoes.
In the summer, when fresh garden tomatoes are ripe and
are lined up like round soldiers on my kitchen window sill,
I grab a big glass bowl and make this salad.
Tomato, Basil and Mozzarella Salad
Ingredients
- 1/3 cup extra virgin olive oil
- 1/4 cup fresh basil, sliced into ribbons
- 1 pound fresh mozzarella, balls or cubes
- 1 teaspoon kosher salt, divided
- freshly ground black pepper, to taste
- 1 pint fresh cherry tomatoes OR
- 4 to 6 fresh roma tomatoes, quartered
- Combine oil and basil in a large bowl, add the mozzarella cheese balls or cubes and season with salt and pepper. Cover and let marinate in the refrigerator for at least one hour. Add tomatoes to oil mixture and toss to combine. Season again with salt and pepper.
