Sourdough Corn Fritters

Made with fresh corn,
sourdough corn fritters are the perfect accompaniment to any meal.
We enjoy these delicious corn fritters with a light drizzle of maple syrup.

Sourdough Corn Fritters

Ingredients
  • 2 cups sourdough starter (fed)
  • 1 egg
  • 1/4 cup vegetable oil
  • 2 tablespoons sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 cup cornmeal
  • 1 1/2 cups fresh or frozen corn kernels (thawed if frozen)
  • cooking oil for frying
  • maple syrup and/or butter
Cooking Directions
  1. Have all ingredients at room temperature.
  2. Mix starter, egg and oil in a bowl. Add sugar, salt, baking soda, cornmeal and corn kernels.
  3. Let the mixture stand at room temperature for about 1 hour.
  4. Heat oil to 375º in a large, deep cast iron skillet or Dutch oven.
  5. Drop batter by tablespoons into hot oil.
  6. Fry until golden brown. Remove from oil, drain on paper towels.
  7. Serve immediately with maple syrup and/or butter.
