Sautéed Green Beans


Today I stopped at my favorite farm stand and
picked up some fresh green beans.
This recipe immediately came to mind.


A simple seasoning of garlic and
Creole seasoning lets the garden-fresh flavor
of green beans shine through.

Sautéed Green Beans

Ingredients
  • 2 pounds fresh green beans, trimmed
  • 1 yellow bell pepper, sliced
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • salt and pepper, to taste
  • 1 teaspoon Creole seasoning
Cooking Directions
  1. Cook green beans in boiling water to cover, 8 to 10 minutes or until crisp-tender. Drain and plunge into ice water to stop the cooking process; drain.
  2. Saute sliced yellow bell pepper in 2 tablespoons hot oil in a large skillet over medium heat 2 minutes or until crisp-tender; add minced garlic and saute 2 minutes more. Add green beans; sprinkle with salt and pepper, to taste and Creole seasoning, cook stirring constantly, until vegetables are heated through.
