I have entered my "nutty"creation
in a contest at Nuts.com.
My "nutty" creation will include 4 ingredients,
that are somewhat new to me.
Cacao Nibs, Goji Berries, Macadamia Nuts and
Milk-Chocolate Covered Espresso Beans.
I hope this recipe for Chocolate Coffee Granola,
will inspire you to try ingredients that are outside of your comfort zone
.

leading up to National Trail Mix Day.
Chocolate Coffee Granola
has a mixture of delicious ingredients such as:
old-fashioned rolled oats, coconut, raisins, flax seeds,
cocoa powder, maple syrup, brown sugar, espresso powder,
goji berries, macadamia nuts, cacao nibs and chocolate covered espresso beans.

Chocolate Coffee Granola
Ingredients
- 3 cups old-fashioned whole rolled oats (not quick or instant)
- 1 cup sweetened flaked coconut
- 1 cup macadamia nuts,roasted and coarsely chopped
- 1/2 cup raisins
- 1/2 cup goji berries
- 1/3 cup flax seeds
- 1/3 cup unsweetened cocoa powder
- 1/2 cup maple syrup or honey
- 1/2 cup packed brown sugar
- 1/4 cup canola oil or coconut oil, melted
- 1 1/2 teaspoons ground cinnamon
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1/4 teaspoon espresso powder
- 1/2 cup cacao nibs or chocolate chips
- 1/2 cup chocolate covered espresso beans, coarsely chopped/
- Preheat oven to 350º Line a large jelly-roll pan with parchment paper. Set aside
- In a large bowl, mix together rolled oats, coconut, macadamia nuts, raisins, goji berries, and flax seeds. Set aside.
- Combine cocoa powder, syrup or honey, brown sugar, oil, cinnamon, vanilla extract, salt and espresso powder in a large microwaveable bowl. Cook at high powder for 3 minutes. Stir, drizzle hot syrup mixture over oats mixture and stir well to combine. Spread granola mixture out onto prepared jelly-roll pan.
- Bake 10 minutes, remove from oven and stir mixture. Return to oven and bake another 10 to 15 minutes or until golden brown. Remove from oven and sprinkle with cacao nibs or chocolate chips. Cool to room temperature, then stir in coarsely chopped chocolate covered espresso beans.
- Break apart into chunks and store in a sealed container at room temperature for up to three weeks.
