Veggie Pizza

On the Menu Today~
Veggie Pizza

Veggie Pizza makes a great appetizer but
I like to serve Veggie Pizza for dinner...
On a hot summer evening,
when I would rather not heat up my kitchen or
eat another grilled burger or grilled chicken breast,
I make this recipe for veggie pizza.

The crust only has to bake for 8 minutes,
so it doesn't heat up your kitchen and
the result is a delicious, refreshing and
satisfying pizza.

Pumpkin Mincemeat Bars

On the Menu Today~
Pumpkin Mincemeat Bars

I love Mincemeat.
I always have.
I can remember when I was a child,
after Thanksgiving dinner,
I would wait patiently
for a slice of mincemeat pie.

I would sit at the "Grown Up" table
and eat a slice of mincemeat pie,
while my cousins would sit at the
"kiddie" table eating pumpkin pie.

This recipe is one of my favorites,
I found the recipe on the back of a jar of
Nonesuch Mincemeat over 10 years ago and
have been making this dessert ever since.

The recipe combines the classic flavors of
pumpkin and mincemeat together.
A layer of mincemeat is topped with a
layer of  'pumpkin pie'

Tortellini Lentil Soup

Lentils are a great way to add fiber and
flavor to any soup or stew recipe.

What I like the most about lentils...
they add body to soups and stews,
are fast cooking,
are very versatile and
my family loves them~

This soup came about one chilly afternoon,
when my hubby and I came in the house after raking leaves and
we were cold and hungry....
it really hit the spot~
