Pickled Pearl Onions

I love these little pearl onions.
I usually freeze a bag or two,
to put in Beef Stew (my favorite way to use them) and
they're great to use in crock pot meals.

This year I decided to also pickle a few jars.
Pearl onions are really easy to pickle,
the hardest part.....
cleaning and peeling them.
I cleaned and peeled roughly 6 lbs...

When I was in my 30's,
I worked at the Cracker Barrel Old Country Store,
where I was first introduced to watermelon rind pickles.
I had never heard of watermelon rind pickles and
the fact that you could make "pickles" from watermelon "rinds" always peaked my curiosity.

I have wanted to make Watermelon Rind Pickles ever since.
What has taken me so long to make them?
Well, to be honest,
I haven't been canning that long, a few years really, but
I finally feel I can "tackle" the watermelon rind pickle...
So here goes!!

What is a Cordial?
What is a Liqueur?
A Cordial or Liqueur is an alcoholic beverage made from a distilled spirit, such as Brandy, Vodka or Rum, then flavored with fruit, cream, herbs, spices, flowers or nuts, and bottled with added sugar. Cordials are quite sweet and not aged for a long period of time. The resting period to blend or marry flavors, can be anywhere from a few weeks, up to a year. In the US, Liqueurs can also be called Cordials. In Germany Liqueurs or Cordials are called Schnapps and in Scandinavia, Aquavit. In some countries, a Cordial means a concentrated non-alcoholic fruit syrup. Many Cordials are served as after dinner "drinks" to help ad in digestion.

Sourdough Blueberry French Toast with Mulberry Syrup

It seems to me that everyone loves French toast.
Over the weekend,
I made something I rarely make....
a Big breakfast~

Sourdough Blueberry French Toast,
drizzled with mulberry syrup
eggs, sunny side up
thick slices of bacon, fried until crisp,
sweet cinnamon rolls,
orange juice and coffee.

Breakfast Heaven!



The addition of blueberry preserves to the egg/milk mixture
turned this recipe for Sourdough Blueberry French Toast into WOW!

Zucchini Nut Prune Bread


It's zucchini time again....
time to dust off all those zucchini recipes
you've been saving all year.

In this recipe,
the addition of chopped prunes
lends a wonderful, earthy flavor to the bread.
I like to make this bread,
cool it completely,
wrap it in plastic wrap,
store it in the refrigerator, unsliced, overnight.
The flavors of the bread seem to come together overnight.
The next morning,
slice and serve this bread with a light drizzle of honey.....

If you have never tried prunes and honey together....
you don't know what your missing.....
they are made for each other.


This delicious bread has it all;
zucchini, walnuts, prunes,
lemon zest and prune juice.

Field Trip- Cucumbers equal Pickles!

On the Menu Today~
Cucumbers

Today on my way home from Shawano WI,
I stopped at my favorite farm stand.
The farm is ran by a very hard-working family, the Kirchner's.
Their farm is located on County Hwy. R, near Suring WI.
I go past this farm all the time and
have stopped there on numerous occasions.
Northern Wisconsin is about 2 weeks behind in the harvest of vegetables and
fruits due to cooler temperatures and lack of rain.

added and the results are delicious.

My Grandma made this chocolate cake with chocolate walnut fudge frosting often and
it was and continues to be, my favorite chocolate cake.
It's the only chocolate cake recipe...and the frosting...
Well, what can I say?
You just have to taste it to be a believer~
