Fruit Salad with Cool Mint Dressing

On the Menu Today~
Fruit Salad with Cool Mint Dressing

This is a delicious and
refreshing way to enjoy summer fruit.
Refreshing on a warm summer evening~
The Cool Mint Dressing needs to be made ahead..
At least 8 hours but will keep in the refrigerator for 1 week.





Cool Mint Dressing

Ingredients
  • 1/3 cup red wine vinegar
  • 1/4 cup honey
  • 1/4 cup olive oil or vegetable oil
  • 8 sprigs fresh mint leaves, torn
  • 1 teaspoon key lime juice
  • 1 teaspoon poppy seeds
Cooking Directions
  1. In a jar with a tight fitting lid, combine the vinegar, honey or brown sugar, oil, mint, lime juice and poppy seeds. Cover tightly and shake well, then refrigerate at least 8 hours. Discard mint leaves and shake the dressing well. Will keep for 1 week in the refrigerator.




Fruit Salad

Ingredients
  • 2 medium firm bananas
  • 2 cups fresh blueberries
  • 2 cups sliced fresh strawberries
  • 1 to 2 tablespoons fresh mint leaves, torn, for garish
  • 1 to 2 teaspoons poppy seeds
  • whipped cream, optional
  • Note: you can add raspberries and blackberries if desired
Cooking Directions
  1. In a large bowl, combine the bananas and berries. Pour the cool mint dressing, over the fruit salad. Garnish with fresh torn mint leaves and poppy seeds, Serve with whipped cream.
