Bacon Blueberry Scones

Bacon Blueberry Scones

I love scones and
this recipe is my favorite~
The bacon and blueberry flavors blend great together.
I like to drizzle these warm scones with honey~





Bacon Blueberry Scones

Ingredients
  • 2 cups all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/3 cup cold butter
  • 3/4 cup buttermilk
  • 1 tablespoon vegetable oil
  • 1 cup fresh or frozen blueberries
  • 4 strips bacon, cooked and crumbled
  • 1 egg
  • 1 tablespoon milk
  • 1 tablespoon sugar
Cooking Directions
  1. In a large bowl, combine the first six ingredients.
  2. Cut in the cold butter until mixture resembles coarse crumbs.
  3. In a small bowl, whisk together buttermilk and oil; add to crumb mixture. 
  4. Stir in blueberries and bacon.
  5. Turn out onto a floured surface; knead 10 times.
  6. Pat into an 8-inch circle. Cut into eight wedges.
  7. Separate wedges and place on a greased baking sheet.
  8. In a small bowl, beat egg and milk; brush over scones, sprinkle with sugar.
  9. Bake at 425º for 12 to 15 minutes or until golden brown. Serve warm.

Bacon, Blueberry, Scones
Note: If using frozen blueberries, do not thaw before adding to batter.
