Frog Eye Salad is best described
as a creamy, fruity, fruit salad made with pasta.
I thought my grand-kids would like this salad
when I told them the name..
but it turned out,
we all loved this.

I had never of Frog Eye Salad....
I'm really not sure why?
Maybe because it's not a Midwest "salad"
I did some research and
from what I found out,
it may have originated in Utah and
it's very popular there.
If anyone knows anything about Frog Eye Salad,
please leave us a comment below.
We'd love to learn more about this scrumptious salad.


Frog Eye Salad is very similar to an Ambrosia Salad
a very popular Southern salad that is made with
mini marshmallows, pineapple, mandarin oranges and
coconut in a pudding/whipped cream mixture.

Frog eye salad is made, along with the cooked pasta,
crushed pineapple, pineapple tidbits, mini marshmallows,
mandarin oranges and a cooked filling.
Mix it all together with whipped cream or
a non-dairy whipped topping and
you have delicious!



Frog Eye Salad is named after the pasta used in the salad,
the small little pasta called; Acini di Pepe.
This pasta is said to look like little eyes, hence the name.
I have seen recipes for this salad using ring macaroni,
instead of the Acini di Pepe pasta.
I think the next time I make this salad,
I'm going to use both....more eye-like, I think:)

is sometimes called;
Strawberry Pretzel Salad.

I've heard this called a "salad" but
to me it's more of a "dessert"....
but is it? I can't decide..


My sister served this "salad" years ago at a picnic and
that's when I first feel in love with this irresistible
sweet, salty and delicious dessert/salad.

is an easy and delicious,
sweet and salty dessert/salad that
has been around for a long, long tine.
It's been served at family reunions,

With summer fast approaching,
it's time to once again dig out those pasta recipes.
Barbecues and pasta salads are meant for each other.



I know for some people it's easier to stop at the local deli and
pick up a pound or two of pasta salad but 
let's face it....that can get expensive.....



{Deli-style} Macaroni Salad is made with ingredients
you probably have in your refrigerator and pantry right now...
Which means making pasta salad(s) at home is less-expensive and
more economical than buying it at the grocery store deli...
with a well stocked pantry, you can make any number of pasta salads.
Another bonus, making pasta salad(s) at home yields more salad.



Next time your at the grocery store,
stock up on pasta salad ingredients such as;
different pasta 'shapes', black olives, pimentos,
canned beans, tuna, shrimp, artichoke hearts,
sun-dried tomatoes, capers, canned fruit(s), 
mini marshmallows and so on.

Also keep in your pantry: miracle whip, mayonnaise,
vinegar(s), mustard(s), marshmallow fluff, 
pudding mix, jello mix and so on.
You'll be able to whip up a pasta salad(s) anytime~

{Cactus-Canyon Style} Nachos

{Cactus Canyon-Style} Nachos



This recipe is my version of some delicious nachos
I recently had at the Milwaukee Brewers Game.
Fast, Easy and So Delicious!
At the Brewer game,
nachos are served in a large helmet or
a smaller portion is served in a bowl.
I opted for the smaller serving size,
which was more than plenty.
After I got home,
I keep thinking about those nachos!
I knew it might be some time before I went to another game so..
I decided to make my own version of
the popular nachos I devoured at the game.
They turned out fantastic.
Now we can have delicious nachos at home, anytime.
Even though these nachos are delicious,
there is something about eating nachos at the big game..
Everything just seems to taste better while watching a baseball game.


Nacho Chips are smothered with
Seasoned Ground Beef,
then topped with warm
Ro-tel Velveeta Cheese Dip,
piled high with Fresh Pico de Gallo and
finished with a dollop of Sour Cream.
(Sliced pickled jalapenos are optional.)


Looks delicious, doesn't it!
Believe it or not,
there are tortilla chips buried in there...
somewhere underneath all that goodness.

{Meyer}Lemon Pound Cake with {Meyer} Lemon Glaze,
is a cake made in an 8 x 4-inch loaf/bread pan,
so I guess you could call it a loaf-cake.
It's made with Meyer Lemons...those small,
juicy, sweet lemons that are really delicious.
Meyer lemons are compact and packed full of flavor.


This recipe for Lemon Pound Cake makes 2 loaves.
I couldn't decide whether to top the loaves with
roasted strawberries or roasted raspberries,
so I topped one loaf with roasted strawberries and
the other loaf with roasted raspberries!
You could certainly use blackberries, blueberries or
even mulberries.


Today we are celebrating Mom
by preparing all of her favorite dishes.
