Oatmeal Cranberry Sourdough Scones with Orange Glaze

Oatmeal Cranberry Sourdough Scones
with Orange Glaze
Ingredients
  • 2 1/2 cup flour
  • 1 cup rolled oats
  • 1/3 cup sugar
  • 1 tablespoon plus 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 cup butter, cold and cubed
  • 1 egg, lightly beaten
  • 2/3 cup apple juice
  • 2 tablespoon Greek yogurt
  • 2 tablespoon orange juice
  • 1 tablespoon orange zest
  • 2/3 cup active sourdough starter
  • 1/2 cup chopped fresh cranberries
Cooking Directions
  1. Preheat oven to 425º  Line baking sheet with parchment paper.
  2. In large bowl combine flour, oats, sugar, baking powder, salt and baking soda. With pastry blender cut in butter until mixture resembles coarse crumbs.
  3. In small bowl combine egg, apple juice, yogurt, orange juice and orange zest. 
  4. Add to flour mixture; egg mixture, sourdough starter and chopped cranberries. Mix lightly.
  5. Turn out dough onto a well floured surface. Knead 8 to 10 times. Pat dough into a 8 to 10 inch circle. Cut into 10 wedges. Place on parchment lined baking sheet.
  6. Bake for 12 to 15 minutes. Transfer to a wire rack. 
  7. Drizzle with Orange Glaze.


Orange Glaze

Ingredients
  • 1 1/2 cups confectioners' sugar
  • 2 to 3 tablespoons orange juice
Cooking Directions
  1. Stir together confectioners' sugar and orange juice until desired consistency.
