Blueberry Pie

This pie is as easy as 1. 2. 3.
Homemade canned blueberry pie filling plus
a refrigerated pie crust is all that is needed.
You can certainly make your own pie crust but
to save time, we opted for the refrigerated version.

One thing though,
you really can't skimp on the blueberry filling...
We highly recommend making your own blueberry pie filling.
It really isn't difficult and the taste is pure heaven.
Next summer, when blueberries are in season,
go out and pick your own, (fresh is always best) or
when your grocery store runs a special on blueberries,
pick up a couple of cartons and
make some blueberry filling!

The recipe given here Homemade Blueberry Pie Filling is for 1 quart.
I double the recipe and make 2 quarts of pie filling....
which is the usual amount we make....
We like to have 2 quarts of several different fruit pie fillings on hand such as:
blueberry, cherry, peach, blackberry, apple and pear-cranberry,
instead of having six of the same kind of pie filling.
This is our personal preference....
If you have a large family,
have access to large amounts of blueberries,
or you simply love blueberry pie filling and bake often,
by all means, make as many quarts as you want...hey
knock yourself out!

If you don't have any homemade pie filling on hand,
don't worry...
you can still make this delicious pie.
There are many wonderful brands on the market to pick from.

Homemade Blueberry Pie Filling


Making your own pie filling is really quite easy..
Trust me, if I can tackle the job of canning pie filling,
so can you! (no pun intended)
I have been canning for about 4 years now and
I have learned two important lessons about canning...

Number One:
Have everything you need lined up and ready to go..
the canning process goes remarkably fast..and
it goes so much more smoothly when everything is ready.

Number Two:
You don't need to make 10 quarts of the same fruit pie filling or
12 pints of the same type of jam/jelly or marmalade.
I find that making 2,3 or 4 quarts of one type of fruit pie filling and
3-6 pint jars of jam/jelly or marmalade, is enough to meet our needs.

Frankly, we just don't need 10 quarts of Apple,
Cherry or Blueberry Pie Filling.
Four quarts of the same type of pie filling works the best for us....
two quarts to keep in our pantry and
two quarts to give away.
(homemade fruit pie fillings and jams/jelly make great gifts)

We also like to have a variety of fruit pie fillings,
jams/jelly and marmalade in our pantry at all times.
This allows you to whip up something sweet anytime..
such as: coffee cake, bars, cookies or pie
Making smaller batches of fruit pie filling and jams/jellies
also allows you to experiment with different ingredients.
