Tater Tot Casserole

On the Menu Today~
Tater Tot Casserole

This is a can can recipe.
What exactly does that mean?
Well, a can can recipe, is a recipe
that uses two or more cans of condensed soup.

I have been using condensed soup in recipes since I started cooking, many years ago.
My mom used condensed soup and I think my grandma did too.
I know that there are some people who turn up their nose at the thought of using canned condensed soup..if you have the time and money to make your own version of condensed soup,
then by all means, knock yourself out! In fact, send me some, I'd love to try it but let's face it,
there is a reason why Campbell's soup has been in business for all of these years...
Here are just a few reasons:
1. Convenience,
2. Versatile,
3. Affordable
4. Always creamy and delicious

Have you ever really looked at all of the varieties of Campbell's creamed soup!
Campbell's makes over 70 varieties of creamed soup....
from cream of asparagus soup to cream of shrimp soup and
everything in between.....creamed soups are here to stay.
I for one am glad because every now and then,
all you want for dinner is a good ol' fashioned casserole or bake dish or
hot dish...depending on where you live.

German Cucumber Salad or Gurkensalat

On the Menu Today~
Cucumber Salad or
German Cucumber Salad or
Gurkensalat.
This salad is easy, peasy, and oh so delicious...

Gurkensalat
is the perfect salad for picnics, BBQ's or
to serve as a side dish on a hot summer day~
Cool, refreshing and delicious~
Make this salad during the summer months,
when cucumbers are in abundance and at the peak of flavor,
so you can enjoy this sweet, tart, cool and crunchy salad too.
We like to make this salad with regular garden variety cucumbers but
you can also use the English variety that you can find in most grocery stores.
During the winter months, I so use the English variety.
If you want to get fancy, you can use a potato peeler and
peel thin strips around the cucumber, then slice into thin slices.

In Germany, gurkensalat is served at almost every meal.
The secret to a classic German cucumber salad is to slice the cucumbers paper thin,
so thin that you can almost see through the slices.
You can achieve this by using a mandolin.
*Use caution when using a mandolin*

German Cucumber salad is especially delicious served with roast pork,
but we enjoy gurkensalat with just about everything~

Asparagus 101

On the Menu Today~
Fresh Asparagus 101

Today on my drive along the back roads of Wisconsin,
I passed a stand that was selling fresh asparagus.
I decided to pick some up, so I pulled the nearest driveway,
backed up and headed back to the farm stand.

In most States, I'd guess that the asparagus season is over but
here in Wisconsin, at least in the Northern half,
with cooler temperatures this spring and a whole lotta rain.....
it's finally asparagus time. Lucky for me:)

I don't usually buy asparagus, I'm the only one who likes it.
In fact, my hubby has a thing about green vegetables....
he doesn't like them...at all...he won't eat them either.
The only two green vegetables my hubby will eat are broccoli and celery.
All the other green vegetables from Artichokes to Okra he won't touch.
But I wasn't going to pass up fresh, picked asparagus.

What to look for when buying Asparagus~
When shopping for asparagus,
look for stems that are plum and straight.
Check the stems, if they are dry, split or
look 'woody', the asparagus is older.
Thin spears are more tender and sweet,
while fatter stems have a meatier texture and
have a stronger asparagus flavor.
It's a personal choice which you prefer.
I like them both.

How to store Asparagus~
Hold the bunch of asparagus together and
trim an inch off the ends of the asparagus.
Stand the asparagus up in a glass or glass jar and
add about an inch or two of water.
Make sure the ends are sitting in water.
Loosely cover the asparagus with a plastic bag and
store in the refrigerator for up to a week.
Change the water if it becomes cloudy.

How to clean Asparagus~
Rinse the spears under cool water to remove any dirt.
Snap off the bottom inch using your fingers.
The spears will naturally break where the tough woody part ends,
and the tender stem begins.
Dry the spears by rolling then gently between kitchen towels.
You can peel away any tough outer skins with a vegetable peeler,
if you feel it's necessary.

Side Note:
Have you tried the 'new' google photos yet? It's fantastic!
You can make movies using up to 50 photos,
make a collage using up to 9 photos,
you can even make a photo book and
you can add animation to photos too.
I think it's fantastic and
I use it all the time.
Check it out.....

Blackberry Brandy Slush

On the Menu Today~
Blackberry Brandy Slush and
Norms Farms Elderflower Syrup.

Here in Wisconsin, we sure do love a good Brandy Slush.
The Wisconsin Brandy Slush is a Midwestern classic and a
Wisconsin family favorite.
This simple recipe has been handed down in families and
was even published in the Milwaukee Sentinel in 1981.
Popular at Christmas, bridal showers, football games and
perfect for barbecues, special occasions or
lazy summer days spent at the lake.
The Brandy Slush is a perfect summertime or
anytime drink.

A Brandy Slush is a delicious, frozen blend of
fruit juice, lemonade, tea and of course, Brandy.
The icy mix is then topped off with your favorite sparkling soda.
Brandy Slush can be made with plain brandy or
just about any flavored brandy you can find....
A few of our favorite brandies to use are:
Apricot Brandy, Apple Brandy, and Blackberry Brandy.

Our version of the Blackberry Brandy Slush
is topped off with a fantastic syrup...
Elderflower Syrup and/or Elderflower Ginger Syrup.
A Craft Soda Syrup & Cocktail Mixer from
Norm's Farms * Pittsboro* North Carolina

Elderflower Syrup is made in small batches and
uses organic elderflowers that add a succulent and
delicious flavor to sparkling water, cocktails, sorbets,
cakes and so much more.
I enjoy elderflower syrup in my afternoon cup of hot tea,
in place of my usual organic honey.
Elderflower Syrup is deliciously different.
Drizzled on a tall glass of Blackberry Brandy Slush,
Perfection~
Blackberry Brandy Slush is a wonderful drink to sip,
on a hot, muggy, Midwestern summer evening.

Elderflower Syrup or Elderflower Ginger Syrup,
would be delicious on a cake that is normally soaked in alcohol.
The two types of cakes that come to mind are:
Christmas fruit cake and English layered trifle.
Replace some of the alcohol called for in your favorite recipe with
Elderflower Syrup or Elderflower Ginger Syrup,
for a fantastic and different taste sensation.

Norms Farms has everything you will need to know about the Elderberry,
including recipes using their wonderful products.

Bean Hash

On the Menu Today~
Bean Hash

This recipe has been in my family for as long as I can remember.
When I was a kid, my mom made this recipe often...
stretching her food budget as far as she could.

When I was a young mother and
had to stretch my food budget as far as I could...
I made Bean Hash for my own family.
Back then, I made bean hash as a main dish,
serving it with cornbread muffins.
Now I serve bean hash as a side dish for picnics and barbecues.

Bean Hash goes by many different names in my family...
such as: Bean Crash, Bobby's Beans, Bean Dish,
and my personal favorite, A$$hole Casserole.
All names are courteous of my son, Bob.

Sauerkraut Casserole tasted to me anyways,
just like a filling I have used in Stuffed Cabbage Rolls,
The only difference, this recipe calls for egg noodles and
the recipe for stuffed cabbage rolls calls for using rice.

Matcha Overnight Oats

On the Menu Today~
Matcha Overnight Oats

Kermit the Frog was right...
It's not easy being green...
Green Vegetables....
Green Matcha Powder and so on..
Even though green vegetables and
green matcha powder are high in Vitamins and
are excellent for you, for some people, it takes some getting use to.

Case in point...me~
This was my very first time
trying matcha powder...
To be perfectly honest....
it's probably going to be my last time too.
Matcha is something you either like or you don't.
I don't but on the other hand, my hubby loved it.

To me matcha tasted...
for lack of a better word,
Green...Healthy...
Matcha had a similar taste,
to what I think,
2-day old mowed,
dried grass might taste like...
greenish and grassy.

Now if you like that sorta of thing,
than this recipe is for you or
if you've had matcha powder before and
like it, than this recipe will sure to please.
Like I said, my hubby love this recipe...
he couldn't get enough of it...

Like I always told my kids and
now tell my grandkids...
"You don't know if you like it,
or if you don't like it,
unless you give it a try"
