keep in mind that mint grows fast and
spreads rapidly due to taproots that grow underground.
It’s best to plant mint in a large clay pot and
then plant clay pot and all, directly into the ground.
This will keep the taproot contained and under control.

You simply can't stop at one leg...
before you know it, you've eaten half a dozen!


My favorite grocery store recently ran a special on chicken drumsticks.
Drumsticks were on sale for .99¢ per pound..not bad.
I picked up two packages, both packages were slightly under 4 lbs. each.
One package was $3.84¢ and the second package was $3.70¢.
For $7.54¢, that's a whole lotta legs.


What can you make with almost 8 lbs. of legs....
and has only 2 other ingredients?
Hmm..that recipe would be this recipe for...Sticky Legs.



Sticky Legs are great served as an appetizer or
served with a loaf of French bread and
plenty of damp towelettes.

Baked Deviled Eggs with Toast Points

Baked Deviled Eggs with Toast Points

supper or you make this dish using leftover hard-boiled eggs...
Baked Deviled Eggs with Toast Points is sure to become a family favorite.

Give this different and delicious recipe a try~
It may become your family's favorite way to eat hard-boiled eggs.


Serve Baked Deviled Eggs with
homemade Toast Points for a complete meal.
I can't think of a better way to eat eggs.


This recipe is made with a can of deviled ham spread but
if you have leftover Easter ham, you can use that instead....
Just grind some of the ham in a meat grinder first.




Baked Deviled Eggs

Ingredients
  • 8 hard-cooked eggs
  • 1 (4.25 oz) can deviled ham spread OR
  • 1 cup ground ham 
  • 1/4 cup butter, softened
  • 1 tablespoon diced onion
  • 1 teaspoon snipped fresh parsley
  • 1/2 teaspoon Worcestershire sauce
  • 1/4 teaspoon Dijon mustard
  • 4 tablespoons butter
  • 1/2 cup flour
  • 1/8 teaspoon paprika
  • 1/4 teaspoon salt
  • dash of black pepper
  • 1 (14 oz) can chicken broth
  • 1 cup half and half
  • Garnish: sliced green onion tops, paprika and pepper.
Cooking Directions
  1. Halve the hard-cooked eggs lengthwise and remove yolks.
  2. Set whites aside.
  3. Place yolks in a bowl; mash with a fork.
  4. Add ham, 1/4 cup butter, onion, parsley, Worcestershire sauce, and mustard.
  5. Fill egg whites with yolk mixture, set aside.
  6. In a large ovenproof skillet, melt the 4 tablespoons butter over medium heat.
  7. Stir in the flour, paprika, salt and pepper. Add chicken broth and milk. Cook and stir until thickened and bubbly. Cook and stir 2 minutes more. Carefully place filled eggs in skillet. Cover, bake in oven for 10 minutes or eggs are heated through. Serve hot with toast points.



Toast Points

Ingredients
  • 10 slices white bread
  • 3 tablespoons butter, melted
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon chili powder
Cooking Directions
  1. Preheat oven to 400°.
  2. Remove crusts from bread slices; cut each slice into 4 triangles. Stir together melted butter, onion powder, and salt. Lightly brush 1 side of bread with butter mixture; place, buttered sides up, on a baking sheet.
  3. Bake 6 to 8 minutes or until toasted; cool on a wire rack 30 minutes.

{Coconut} Honey Bun Cake

{Coconut} Honey Bun Cake


{Coconut} Honey Bun Cake,
gets it's delicious coconut flavor from coconut extract.
Sour cream, eggs and vegetable oil makes this boxed cake mix super moist.
brown sugar/coconut 'swirl' is made up of brown sugar,
cinnamon, coconut and pecans.
You can adjust the amounts of the brown sugar/coconut 'swirl'
in this recipe according to your family's taste.


For a less sweet swirl, decrease brown sugar by a 1/4 cup.
If you like more pecans than coconut,
decrease coconut to 1/2 cup and increase pecans to 3/4 cup.
If your family doesn't like coconut, don't add it,
use vanilla extract instead of the coconut extract and
add extra pecans, this cake is very forgiving.


We like to make this delicious cake without the 'swirl' and
serve slices of cake with macerated strawberries.
So Good!

Asparagus Frittata

Asparagus Frittata

We 💓 a frittata!
Frittatas are versatile, very inexpensive, quick to make and
above all.... frittatas are super delicious!
A frittata can be enjoyed for breakfast, brunch,
lunch, mid-afternoon snack, dinner or a late-night snack.
You get the picture....a frittata is great anytime~

As a whole, I'm not a huge fan of eggs.....{sorry egg fans}
meaning I am not a bacon and eggs, kinda gal.
Scrambled, over-easy or sunny-side up eggs are not on my menu.
The only way I eat an egg is either in an omelet or frittata so
that could be the reason why I love a frittata...

Asparagus is part of the lily family.
Fresh asparagus is in season from February through June,
although it's available year-round in some some areas.
The earliest, most tender stalks are a beautiful apple-green,
with purple-tinged tips.
White asparagus, particularly the famous French asparagus of Argenteuil,
is grown underground to prevent it from becoming green.
White asparagus is usually thick and are smoother than the green variety.
There's also a purple variety called Viola.
When buying asparagus, choose firm, bright green (or pale ivory) stalks with tight tips.


Asparagus plants live 8 to 10 years and
the spear's size indicates the age of plant from which it came.
The more mature the plant,
the thicker the asparagus.


Frittata [frih-TAH-tuh]
An Italian omelet that usually has the ingredients mixed with the eggs rather than being folded inside, as with a French omelet. It can be flipped or the top can be finished under a broiler.  A frittata is cooked very slowly over low heat, and round because it isn't folded, like is a French omelet.

I have been using my slow cooker for years and
have made just about everything and anything you can think of but
I have never used my slow cooker to make an actual dessert.
After making this recipe, I have been wondering what has taken me so long!


Slow Cooker Cherry Dump Cake is beyond easy.
 I mean, only three ingredients easy.


I had 2 quarts of homemade cherry pie filling that needed a recipe and
I had a package of yellow cake mix calling my name...so
I took the plunge and made a dessert in my slow cooker.
If you don't have homemade cherry pie filling that needs a recipe,
you can use 2- 21 oz. cans of store-bought cherry pie filling.
Don't like cherry? Use blueberry instead.

The flavor combinations for this simple recipe are endless...
Blueberry pie filling with a lemon cake  mix,
Apple pie filling with a spice cake mix or
Cherry Pie Filling with a chocolate cake mix.

Fresh cod fillets are wrapped around slices of fontina cheese and
fresh asparagus spears, then topped with a simple, yet delicious tomato sauce.
The cod fillets are then nestled on a bed of blanched fresh baby spinach and
all is served on top of  hot, cooked angel hair pasta.
Delicious~


Saucy Cod Fillets Florentine is a different and
delicious way to enjoy fresh cod fillets.
Not only is this recipe fairly inexpensive to make,
it's a great low-cal meal option.

If you and your family aren't big fans of asparagus, not to worry...
use scallions, haricots verts or baby rainbow carrots instead.
I have also made this recipe, with the same excellent results,
simply by replacing the fresh cod fillets with turkey or veal cutlets.
Keep in mind that cooking times will vary when
substituting cutlets for the cod fillets and
also when replacing the asparagus spears with different vegetables.

{Easy} Chicken Salad

{Easy} Chicken Salad

With only three ingredients total,
five, if you count the salt and pepper,
this recipe for {easy} chicken salad, is just that,
super, duper, easy.

Not only is {easy} chicken salad easy, it's delicious!
I love to bring {easy} chicken salad to parties.
Served with buttery crackers,
it's always the first thing to disappear.


Easy chicken salad can be made with a
rotisserie chicken, baked chicken breasts,
baked chicken thighs or legs and/or a
combination of all of the above.
Leftover chicken is perfect for this salad.
Or when chicken goes on sale,
keep this recipe in mind and
stock up.

The next time you prepare chicken for dinner,
make a few extra pieces of chicken....
the next day you'll be ready to make
{Easy} Chicken Salad.
