Vanilla Refrigerator Cookies

Vanilla Refrigerator Cookies

This recipe booklet is from the 1950's
which makes this recipe very old...
I found this recipe in a recipe booklet that was my mom's.
I remember making these cookies with her and
I thought it was so cool that you could keep the dough in the refrigerator and
slice & bake cookies anytime.
This was way before slice n' bake cookies,
like the kind we know of today, were popular.
I guess you could say that this recipe was
the 'original' slice n' bake cookie.





Vanilla Refrigerator Cookies

Ingredients
  • 1 1/2 cups all purpose flour
  • 1/2 teaspoon baking soda
  • 3/4 teaspoon salt
  • 1/2 cup soft shortening
  • 1 cup sugar
  • 1 egg
  • 2 teaspoons vanilla extract
  • 1/2 cup chopped pitted dates
  • 1/2 cup chopped nuts
Cooking Directions
  1. Combine flour, soda, and salt. Set aside.
  2. Beat until creamy, shortening, sugar, egg and vanilla.
  3. Gradually add flour mixture, then add the dates and nuts. Mix well.
  4. Turn dough onto a large piece of waxed paper. Shape into a rectangle 2 inches in diameter.
  5. Refrigerate several hours, overnight, or several weeks.
  6. At baking time: 
  7. Heat oven to 375º
  8. Slice dough 1/8 to 1/4 inch thick. Slice off only what you need. Return un-sliced dough to refrigerator. Place slices on cookie sheet lined with parchment paper.
  9. Bake 10 minutes or until golden brown.
