Chocolate Chocolate Chip Cranberry Biscotti

Chocolate Chocolate Chip Cranberry Biscotti


Made with cocoa powder,
chocolate chips and dried cranberries,
these Italian twice-baked "cookies" rock!

Chocolate Chocolate Chip Cranberry Biscotti
  • 2 3/4 cups flour
  • 1 cup sugar
  • 2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground cinnamon
  • 1/3 cup cocoa powder
  • 1/2 cup butter, room temperature
  • 1 tablespoon oil
  • eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup chocolate chips
  • 1/2 cup dried cranberries
Cooking Directions
  1. Preheat oven to 350º
  2. Combine the flour, sugar, baking powder, salt, cinnamon and cocoa.
  3. Beat together butter, oil, eggs, and vanilla extract
  4. Add flour mixture to creamed mixture. Stir until blended
  5. Add chocolate chips and dried cranberries. Stir together until combined.
  6. Turn dough out onto a lightly floured surface, knead 8 to 12 times.
  7. Divide dough in half. Shape each portion into an 8 inch long roll.
  8. Place rolls, 6 inches apart, onto a baking sheet lined with parchment paper
  9. Flatten dough to one inch thickness.
  10. Bake at 350 for 30 to 35 minutes
  11. Remove rolls to a wire rack. Cool 10 minutes
  12. Using a serrated knife, cut logs into 3/4 inch slices
  13. Place slices on baking sheet lined with parchment paper
  14. Bake at 350 for 8 to 10 minutes
  15. Turn slices over and bake an additional 8 to 10 minutes
  16. Remove from baking sheet, cool on wire rack
