Banana Pecan Sourdough Scones

Banana Pecan Sourdough Scones

Ingredients
  • 2 1/2 cups flour
  • 1 cup rolled oats
  • 1/3 cup packed brown sugar
  • 1 tablespoon plus 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon allspice
  • 1/2 cup butter, cold and cubed
  • 1 egg, slightly beaten
  • 2 tablespoons Greek-style vanilla yogurt
  • 1/3 cup milk
  • 2 bananas, mashed
  • 1/2 cup fed sourdough starter
  • 1/2 cup chopped pecans
  • Topping Ingredients:
  • 1/4 cup rolled oats
  • 3/4 cup brown sugar
  • 3 tablespoons flour
  • 1/4 teaspoon ground cinnamon
  • 1/2 cup chopped pecans
  • 1/4 cup melted butter
Scone directions:
  1. Preheat oven to 425º Line baking sheet with parchment paper.
  2. In large bowl combine flour, oatmeal, brown sugar, baking powder, salt, baking soda, cinnamon and allspice. Cut cold, cubed butter into dry ingredients with a pastry blender.
  3. In small bowl combine egg, yogurt, milk and bananas. Add to flour mixture. Stir together lightly. Add sourdough starter and chopped pecans to flour mixture. Stir just until combined.
  4. Turn dough out onto a lightly floured surface. Knead 8 to 10 times. Pat into a 10 inch circle. Sprinkle with streusel topping. Cut into 8 to 10 wedges. Place wedges on parchment lined baking sheet.
  5. Bake for 12 to 15 minutes Remove from oven, transfer scones to a wire rack to cool.
