Ingredients
- 2 tablespoons ground cumin
- 2 tablespoons ground chili powder
- 2 tablespoons ground smokey paprika
- 2 tablespoons dried oregano
- 1 tablespoon garlic powder
- 2 teaspoons cayenne powder
- Mix all seasonings together.
- Store in air-tight container.
Molé Sauce
I have never made Molé sauce from scratch but it's definitely on my "to do" list.
Until then, my favorite brand of jarred Molé sauce is: Doña María
For a refreshing treat..
Try a Jarritos Mexican Soda.
Flavors are: Mango, Pineapple, Fruit Punch, Guava, Lime, Mandarin,
Strawberry, Tamarind, Grapefruit, Mexican Cola, Jamaica.
Any flavor will go well with your Cinco de Mayo Dinner.
Spanish Rice
Ingredients
- 2 cups long grain white rice
- 1/4 cup vegetable oil
- 1/2 cup yellow onion, chopped
- 1/2 green bell pepper, chopped
- 1/2 red bell pepper, chopped
- 2 cloves garlic, minced
- 3/4 cup tomato sauce
- 2 teaspoons sea salt
- 2 3/4 cups chicken broth
- Heat oil in a 12-inch skillet over medium-high heat. Add rice, saute' rice until golden brown about 10 to 15 minutes. Add onion and peppers. Saute' another 5 to 10 minutes. Add minced garlic, saute' 3 minutes. Add tomato sauce, chicken broth and salt. Stir.
- Turn heat up to high. Bring mixture to a full boil. Boil 2 minutes. Reduce heat to low, cover tightly, simmer 20 minutes. Turn off heat. Let rice stand 5 minutes. Fluff with fork.
