Cheesy Cornbread Sticks

Cheesy Cornbread Sticks


Corn bread shaped like "corn" sticks or cactus?
Yum!

Cheddar cheese mixed into the batter
makes these corn sticks even more special. 
Perfect for a Southwestern themed party or a
cowboy themed birthday party~



Cheesy Cornbread Sticks

Ingredients
  • 2 cups all-purpose flour
  • 1 cup yellow cornmeal
  • 1/3 cup sugar
  • 1 1/2 tablespoons baking powder
  • 1 teaspoon salt
  • 1/4 teaspoon chili powder
  • 1/2 cup shortening
  • 1 1/2 cups milk
  • 2 eggs, beaten
  • 1/2 cup shredded cheddar cheese
Cooking Directions
  1. Preheat oven to 400º
  2. Generously grease corn stick or cactus shaped cast iron mold. 
  3. Place greased mold in oven for 8 to 10 minutes.
  4. In a medium bowl, combine the first 6 ingredients.
  5. Cut in shortening until the mixture resembles coarse crumbs.
  6. In a medium bowl, combine milk, eggs and cheddar cheese.
  7. Stir into shortening mixture just until blended.
  8. Carefully remove hot mold from oven.
  9. Carefully fill hot molds almost full.
  10. Bake at 400 degrees for 13 to 15 minutes or until golden brown.
  11. Remove from oven.
  12. Cool corn sticks in pan for 5 minutes.
  13. Remove cornbread sticks from pan.
  14. Cool on wire racks.
