Lentil Soup
I love lentils and use them often in soups, stews and as a side dish~
Give this yummy soup a try...you'll love it:)
Lentil Soup
Ingredients
- 1 cup dried lentils, rinsed
- 6 cups chicken broth
- 1/2 cup chopped onion
- 2 cloves garlic, minced
- 3 stalks celery, chopped
- 2 tablespoons olive oil
- 1 (14 1/2 oz) can diced tomatoes with green chilies, undrained
- 1 cup shredded carrots
- 1/2 teaspoon dried thyme
- 1/4 teaspoon dried marjoram
- crushed red pepper flakes, optional
- sour cream, optional
- In a large saucepan, bring lentils and chicken broth to a boil. Reduce heat, simmer for 30 minutes. Meanwhile in a skillet saute' onion, garlic, celery in oil until vegetables are tender. Add to saucepan, stir. Add tomatoes, carrots, thyme and marjoram, stir well.
- Cook for 30 minutes or until lentils are tender.
- Serve with a dollop of sour cream and sprinkle with crushed red pepper, if desired.
