Santa Fe Bean Dip

A wonderful bean dip you can bring to any party~



Santa Fe Bean Dip

Ingredients
  • 3 cups dried pinto beans, sorted and rinsed
  • 8 cups water
  • 1 large yellow onion, chopped
  • 4 cloves garlic, minced
  • 1 1/2 cups salsa
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 teaspoon taco seasoning
  • juice from one lime
  • 2 to 4 tablespoons hot sauce
  • 1 1/2 cups shredded taco style cheese blend
Cooking Directions
  1. In a large saucepan, combine beans, water, onion and garlic. Bring to a boil. Lower the heat and simmer covered, for 2 to 2 1/2 hours or until beans are very tender. Cool slightly (do not drain) In a food processor or with an immersion blender, process bean mixture, half at a time, until smooth. Return bean mixture to the saucepan. Stir in salsa, seasonings, lime juice and hot sauce. Cook uncovered, over moderate heat for 5 minutes or until desired consistency, stirring constantly. Stir in shredded cheese, stir until cheese melts.
