Lemon Cream Cheese Bars
have three layers of delicious flavor.
The cream cheese layer and
lemon layer will mix slightly
while baking, creating the
layers.
Lemon Cream Cheese Bars~
Crust Layer
Ingredients
- 2 cups all-purpose flour
- 3/4 cup confectioners' sugar
- 1 cup cold butter
Cooking Directions:
- In a bowl, combine flour and confectioners' sugar, cut in butter until crumbly.
- Press into an un-greased 13 x 9 x 2 in baking dish.
- Bake at 350º for 20 minutes or until lightly brown.
Cream Cheese Layer
Ingredients
- 16 ounce cream cheese, softened
- 1 cup sugar
- 2 eggs
- 1 teaspoon vanilla extract
- Place cream cheese and sugar in a large mixing bowl.
- Using an electric mixer, mix on low speed until smooth.
- Add eggs and vanilla extract, continue to mix on low speed until smooth.
- Pour cream cheese mixture evenly over hot crust.
Lemon Layer
- 4 eggs
- 6 tablespoons fresh lemon juice
- 1 tablespoon lemon zest
- 1 1/2 cups sugar
- 1/4 cup all-purpose flour
- In a large mixing bowl, beat eggs until frothy.
- Stir in lemon juice and peel.
- Combine the sugar and flour. Stir into egg mixture.
- Carefully pour over cream cheese layer.
- Bake for 35 to 45 minutes or until center does not jiggle when the pan is shaken.
- Cool pan on wire rack.
