Lemon Cream Cheese Bars

Lemon Cream Cheese Bars~



Lemon Cream Cheese Bars
have three layers of delicious flavor.

The cream cheese layer and
lemon layer will mix slightly
while baking, creating the
layers.


Lemon Cream Cheese Bars~


Crust Layer

Ingredients
  • 2 cups all-purpose flour
  • 3/4 cup confectioners' sugar
  • 1 cup cold butter

Cooking Directions:
  1. In a bowl, combine flour and confectioners' sugar, cut in butter until crumbly.
  2. Press into an un-greased 13 x 9 x 2 in baking dish.
  3. Bake at 350º for 20 minutes or until lightly brown.


Cream Cheese Layer

Ingredients
  • 16 ounce cream cheese, softened
  • 1 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
Cooking Directions
  1. Place cream cheese and sugar in a large mixing bowl.
  2. Using an electric mixer, mix on low speed until smooth.
  3. Add eggs and vanilla extract, continue to mix on low speed until smooth.
  4. Pour cream cheese mixture evenly over hot crust.

Lemon Layer
Ingredients
  • 4 eggs
  • 6 tablespoons fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 1/2 cups sugar
  • 1/4 cup all-purpose flour
Cooking Directions
  1. In a large mixing bowl, beat eggs until frothy.
  2. Stir in lemon juice and peel.
  3. Combine the sugar and flour. Stir into egg mixture.
  4. Carefully pour over cream cheese layer.
  5. Bake for 35 to 45 minutes or until center does not jiggle when the pan is shaken.
  6. Cool pan on wire rack.
