we took the challenge and decided on:
Healthy Solutions Spice Blends for Italian Meatballs



Meatballs are a favorite of my family and
I have made many meatballs in my day~
Another plus, left-overs are fantastic and
you can use this same recipe to make:
Italian Meatball Subs and Pizza Burgers~
Recipes follow~




Italian Meatballs, Pizza Burgers and Meatball Subs

Ingredients
  • For Meatballs:
  • 3/4 pound ground beef
  • 3/4 pound ground pork
  • 3/4 pound bison
  • 3 cloves garlic, minced
  • 1/3 cup chopped onions
  • 1 egg
  • 1 packet Italian spice blend seasoning mix
  • 1/2 cup Italian bread crumbs
  • 1/3 cup Parmesan cheese
  • 1/3 cup (from 28 oz jar) tomato-basil spaghetti sauce or use your favorite sauce
  • Remaining Ingredients:
  • Reserve remaining spaghetti sauce for serving
  • 1/4 cup red wine, optional
  • 6 tablespoons olive oil, divided
  • 1 (12 oz) package vino rosso linguine or linguine of your choice
  • 4 quarts water
Cooking Directions
  1. Mix all meatball ingredients together in a large bowl using a large spoon or your clean hands. Shape meat mixture into meatballs, 1 to 2 inches in size. Heat 3 tablespoons olive oil in a large skillet. Brown meatballs on all sides. Do not crowd skillet. Remove meatballs and drain. Continue until all meatballs are browned and drained. Wipe out skillet. Heat remaining 3 tablespoons olive oil in same skillet over low heat. Return meatballs back to the skillet. Add remaining spaghetti sauce to skillet; add red wine if using. Cover. Heat on medium to medium low heat until hot and bubbly.
  2. Meanwhile make linguine:
  3. Bring 4 quarts water to a boil. Add pasta, boil 5 to 8 minutes. Taste test for desired al dente. Drain thoroughly.
  4. To serve :
  5. Place linguine on serving plate. Top with meatballs and sauce.
  6. Sprinkle with Parmesan cheese. Serve and Enjoy~
  7. Pizza Burgers:
  8. Follow recipe above but instead of making meatballs, form meat mixture into patties. Grill burgers until no longer pink inside. Place a slice of mozzarella cheese on burgers. Cover and heat until cheese is melted. Place grilled Italian burgers on toasted buttered buns. Top burgers with a small amount of warmed spaghetti sauce. Serve and Enjoy~
  9. Italian Meatball Subs:
  10. Follow recipe above. When meatballs and sauce are hot and bubbly, preheat broiler. With a serrated knife, cut a 2-inch slice from the top of each 4-6 Italian rolls. Hollow out the rolls and discard insides. Spoon the meatballs and sauce into the rolls. Sprinkle each sub with shredded mozzarella cheese and Parmesan cheese. Broil the sandwiches 4 inches from the heat for 1 minute or until the cheese melts. Serve and Enjoy~
