Strawberry Pancakes with Mini Chocolate Chips

Strawberry Whole Wheat Pancakes with Mini Chocolate Chips

Ingredients
  • 1 1/2 cups whole wheat flour
  • 3 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 eggs
  • 2/3 cup creamy strawberry yogurt
  • 3/4 cup water
  • 3 tablespoons oil
  • few drops neon pink gel food coloring
  • 1 cup mini chocolate chips
  • 1 1/2 cups sliced fresh strawberries, optional
Cooking Directions
  1. Heat griddle to 375º  Lightly grease with oil.
  2. In a large bowl, mix flour, sugar, baking powder, baking soda, and salt; set aside.
  3. In a medium bowl beat eggs, 2/3 cup strawberry yogurt, water and oil with wire whisk until blended. Pour egg mixture into flour mixture. Add few drops of neon pink gel food coloring. Stir until moistened. Scoop batter using a large ladle and pour onto griddle. With the back of a spoon, spread into a circle. Sprinkle with mini chocolate chips. Cook a few minutes or until edges begin to brown and bubbles appear on top surface. Flip over and cook until golden brown. Serve with sliced fresh strawberries, strawberry yogurt and/or maple syrup.
