Bran Muffins with a Crunchy Top

Add a banana, yogurt and some juice and it's even better~


Bran Muffins with a Crunchy Top

Ingredients
  • 1 3/4 cups bran flakes cereal
  • 1 cup buttermilk
  • 1 egg, beaten
  • 3 tablespoons vegetable oil
  • 1 1/4 cups flour
  • 1/3 cup brown sugar
  • 1 tablespoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 cup golden raisins
Cooking Directions
  1. Preheat oven to 400º Grease or paper-line 10 to 12 muffin cups.
  2. Combine cereal, buttermilk, egg and oil in a bowl. Let stand for 10 minutes, stir to break up cereal. Combine flour, sugar, baking powder and cinnamon in separate bowl.
  3. Add cereal mixture all at once to flour mixture, stirring just until combined. (Batter will be thick) Fold in raisins.
  4. Divide batter between 10 to 12 muffin cups.
  5. Sprinkle with crunchy topping. (recipe below)
  6. Bake 20 to 25 minutes or until toothpick inserted in center comes out clean.

Crunchy Topping

Ingredients
  • 3/4 cup bran flakes cereal, crushed to 1/3 cup
  • 2 tablespoons brown sugar
  • 1 tablespoon butter, melted
Cooking Directions:
  1. Combine cereal, sugar, and melted butter. Mix well.
  2. Divide evenly among muffin cups.

Kitchen Tip~
To ensure even baking of muffins,
fill any empty muffin cups with a 1/4 cup of water.
Bake muffins as usual, this will ensure even baking.
