Papaya Fritters

On the Menu Today~
Papaya Fritters

This recipe features a boxed mix called:
Irondale Cafe Original,
Whistle Stop Recipes Brand Fruit Fritter Mix.
Great for apples, pears, blueberries,
strawberries, peaches, pineapple,
blackberries or even papaya.

Whistle Stop Recipes Brand Fruit Fritter Mix is delicious.
The batter has a sweet, buttery and brown sugary flavor,
with a hint of spice and vanilla.

The batter fried up light and airy with that
old-fashioned corn meal taste,
you'd expect from a southern-style fritter.

These excerpts are from the back of the box of fruit fritter mix.
"These are the same recipes my family and I have enjoyed for years~ down-home and delicious!" Fannie Flagg, author of Fried Green Tomatoes at the Whistle Stop Cafe.
"On a lazy afternoon eighty years ago, at a whistle stop nestled beside the tracks just east of Birmingham, a tradition of down-home cooking was born. That's when the first batch of fried green tomatoes was served at the Irondale Cafe. Some fifty years later, Fannie Flagg would write a book about that same whistle stop and the recipes perfected over thousands of meals shared with family and friends. Today the Irondale Cafe seems frozen in time as those giant freight and passenger trains rumble by. The cafe still carries on the legacy of down-home family cooking, and for over eighteen years Bill and Mary Jo have offered their delicious secrets with their "Original Whistlestop Recipes." From their heart to your table, enjoy the memories of good times shared at the Original Whistle Stop Cafe."
Commitment to Quality: The Irondale Cafe has a rich tradition of providing consistently high quality nutritious and delicious foods. Now, with our "Original Whistle Stop" recipes, you can taste the proud heritage of great "Southern Goodness" at its best.

Papaya Fritters

Ingredients
  • 2 to 2 1/2 cups diced fruit of choice (one 15 oz can papaya chunks, diced)
  • 1 10 ounce bag fruit fritter mix
  • 1 egg
  • 1/4 to 1/2 cup milk
  • vegetable oil for frying
  • non-stick spray for baking
  • shredded coconut and sugar for dusting
Cooking Directions
  1. To Fry:
  2. Prep: Dice 2 cups of fruit of choice.{Do not dice blueberries)
  3. Mix 1/4 cup milk and egg in mixing bowl. Mix in two-thirds of package of fritter batter. Stir to smooth consistency. Mix in 2 cups of diced fruit of choice. Mix in the rest of the fritter batter and mix well. For frying, a thick consistency is best. You may add a little more milk but remember, you want a thick consistency.
  4. After oil reaches frying temperature, approximately 350 to 375 degrees, place your mixture into hot oil, one tablespoon at a time, gently; do not spatter oil. Fry to golden brown. Take out with tongs and allow to drain on paper towels. Serving suggestions: top with an icing or a sprinkle of powdered or granulated sugar. Top with flaked coconut if desired.
  5. To Bake:
  6. Mix 1/3 to 1/2 cup milk, egg and batter to smooth consistency as above, then add 2 1/2 cups diced fruit and stir well. Spoon into muffin tins 2/3 full and bake for 18 to 24 minutes at 375 degrees; time depends on size of muffin and oven temps variations. Depending on the size of your muffin tin, expect to make 8 to 14 of them.
  7. Fried Sliced Fruit Fritters:
  8. Mix egg and 1/3 to 1/2 cup milk, mix in batter to smooth consistency without fruit. Slice your fruit, apples, pears or large strawberries into slices 1/4-inch thick. Dip into batter, place in oil with tongs and fry until golden brown. Take out with tongs and allow to drain on paper towels.
