Amish Friendship Bread Lemon Poppy Seed Biscotti
Amish Friendship Bread Lemon Poppy Seed Biscotti
Ingredients
- 1 cup Amish friendship starter
- 2/3 cup sugar
- 1/2 cup butter, softened
- 1 teaspoon lemon extract
- 1 egg
- 3 cups flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 2 tablespoons lemon zest
- 3 to 4 tablespoons poppy seeds
- white chocolate melted, for dipping
- Preheat oven to 350º
- In a medium bowl, cream together starter, sugar and butter. Stir in lemon extract and egg.
- In another bowl, combine flour, baking powder, salt and lemon zest. Stir into creamed mixture. Fold in poppy seeds.
- Divide dough into 2 pieces. Roll each piece into a log about 10 inches long. Place logs on an ungreased cookie sheet and flatten until they are about 3 inches wide.
- Bake for 30 to 35 minutes or until firm. Cool on baking sheet for 10 to 15 minutes.
- Slice logs crosswise into 1/2 inch wide slices. Place slices cut side down on baking sheet.
- Return to oven for an additional 15 minutes or until crisp and light brown. Cool.
- Dip one end of biscotti into melted white chocolate. Place on cooling rack, dipped side up, until chocolate hardens. Store in an airtight container.
