Amish Friendship Bread Lemon Poppy Seed Biscotti

Ingredients
  • 1 cup Amish friendship starter
  • 2/3 cup sugar
  • 1/2 cup butter, softened
  • 1 teaspoon lemon extract
  • 1 egg
  • 3 cups flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons lemon zest
  • 3 to 4 tablespoons poppy seeds
  • white chocolate melted, for dipping
Cooking Directions
  1. Preheat oven to 350º
  2. In a medium bowl, cream together starter, sugar and butter. Stir in lemon extract and egg.
  3. In another bowl, combine flour, baking powder, salt and lemon zest. Stir into creamed mixture. Fold in poppy seeds.
  4. Divide dough into 2 pieces. Roll each piece into a log about 10 inches long. Place logs on an ungreased cookie sheet and flatten until they are about 3 inches wide.
  5. Bake for 30 to 35 minutes or until firm. Cool on baking sheet for 10 to 15 minutes.
  6. Slice logs crosswise into 1/2 inch wide slices. Place slices cut side down on baking sheet.
  7. Return to oven for an additional 15 minutes or until crisp and light brown. Cool.
  8. Dip one end of biscotti into melted white chocolate. Place on cooling rack, dipped side up, until chocolate hardens. Store in an airtight container.
Yield: 24 biscotti
