Fried Corn

On the Menu Today~
Fried Corn

My Grandma made her fried corn recipe with heavy cream...
but I prefer to make this old-fashioned, home-style,
fried corn recipe with canned evaporated milk...
Heavy cream or evaporated milk....
anyway you make this fried corn recipe,
It's delicious...




For an added treat,
serve fried corn over mashed potatoes ...
With a sprinkle of crispy bacon....

One of our favorite ways to eat corn~




Fried Corn

Ingredients
  • 3 cups fresh off the cob corn
  • 4 strips bacon, chopped
  • 1 small onion, chopped
  • 1/2 cup sweet red pepper, chopped
  • 1 teaspoon flour
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/4 teaspoon sugar
  • 1/2 cup canned evaporated milk or heavy cream
  • mashed potatoes, optional
Cooking Directions
  1. If using fresh ears of corn, cut kernels off the cob. Measure 3 cups.
  2. In a 10-inch frying pan, cook bacon over medium heat until crisp. Remove bacon, reserve drippings. Drain the bacon on paper towels; set aside
  3. Add the corn, onion and red pepper to reserved bacon drippings. Cook over medium heat; stirring constantly for 8 minutes or until corn is tender and lightly browned. Stir in the flour, salt, pepper and sugar. Add the milk. Cook, stirring constantly, until mixture starts to thicken.
  4. Cook and stir for 2 minutes mores. Sprinkle with the bacon pieces.


Serve over mashed potatoes if desired.
