Cucumber Canapes'

Ingredients

• 1/2 cup mayonnaise
• 1 (4 oz) package cream cheese, softened
• 1 tablespoon grated shallot
• 1 tablespoon fresh chives, minced
• 1/2 teaspoon white wine vinegar
• 1/2 teaspoon hot sauce
• 1/2 to 1 teaspoon garlic and herb seasoning blend
• 1 loaf pumpernickel bread or cocktail party rye
• 1 large English cucumber, thinly sliced
• diced pimientos garnish
• fresh dill weed garnish

Cooking Directions

1. In a blender or food processor, combine mayonnaise, cream cheese, shallots, chives, vinegar, hot sauce and seasoning. Cover and process until blended. Cover and refrigerate for 2 to 4 hours.
2. Using a 2 1/2 inch biscuit cutter, or a shaped cutter of your choice, cut out circles or shapes from bread slices. Spread mayonnaise mixture over bread; top with cucumber slices.
3. Garnish with diced pimientos and dill weed.
