Slow Cooker Banana's Foster

Ingredients
  • 5 medium bananas
  • 1 cup packed brown sugar
  • 1/4 cup butter, melted
  • 1/4 cup Malibu rum
  • 1 teaspoon vanilla extract
  • 1/3 cup cup chopped pecans
  • 1/3 cup sweetened flaked coconut
  • Vanilla ice cream
  • Pound cake, sliced
Cooking Directions
  1. Cut bananas in half lengthwise, then width-wise. Layer in the bottom of a 1-1/2 quart slow cooker. With a wire whisk, combine the packed brown sugar, melted butter, liqueur and vanilla extract. Pour over bananas in slow cooker. Cook on low for 2 hours.
  2. Sprinkle chopped pecans and coconut over bananas in slow cooker. Cover and cook 1/2 hour longer or until heated through.
  3. Serve over pound cake and top with ice cream.
