Amaretto Cheesecake
Amaretto Cheesecake has a wonderful almond flavor.
Amaretto Cheesecake
Ingredients
- 2 cups graham crackers, crushed
- 1/2 cup butter, melted
- 1/4 cup sugar
- 2 tablespoons ground almonds
- 4 (8 oz) packages cream cheese, room temperature
- 1 1/2 cups sugar
- 2 tablespoons amaretto liqueur, optional
- 1 teaspoon vanilla extract
- 1 teaspoon almond extract
- 1/8 teaspoon salt
- 4 eggs, lightly beaten
- 2 cups sour cream
- 1/4 cup sugar
- 1 teaspoon almond extract
- 1/2 cup slivered almonds
- In a large bowl, combine the cracker crumbs, butter, sugar and ground almonds. Press into the bottom and 1 inch up the sides of a greased 9 inch springform pan.
- In a large bowl, beat cream cheese and sugar until smooth. Beat in the amaretto, extracts and salt. Add eggs; beat on low speed just until combined. Pour into crust. Place on baking sheet.
- Bake at 325º for 55 to 60 minutes or until center is almost set. Remove from oven. Let stand for 5 minutes.
- Combine sour cream, sugar and almond extract; spread over top of cheesecake. Bake 5 minutes longer. Remove from oven and sprinkle with silvered almonds. Cool on a wire rack for 10 minutes. Carefully run a knife around edge of pan to loosen. Cool 1 hour longer. Refrigerate overnight. Remove sides of pan.
Serve with whipped cream, if desired.
