Easy Blueberry Coffee Cake

{Easy} Blueberry Coffee Cake



{Easy} Blueberry Coffee Cake is made with:
a boxed yellow cake mix,
active dry yeast and
blueberry pie filling.
Not only is it easy,
It's Delicious!
You can change the flavor of this delicious coffee cake
just by changing the pie filling.
Try cherry, strawberry, lemon, prune or
even poppyseed.


Easy Blueberry Coffee Cake

Ingredients
  • 1 (18 1/4 oz) yellow cake mix
  • 1 cup flour
  • 1 package (1/4 oz) active dry yeast
  • 2/3 cup warm water (120-130 degrees)
  • 2 eggs, lightly beaten
  • 1 can (21 oz) blueberry pie filling
  • 1/3 cup cold butter
Cooking Directions
  1. In a large bowl combine 1-1/2 cups cake mix, flour, yeast and water until smooth. Stir in eggs until well blended. Transfer to a greased 13 x 9 baking dish. Gently spoon pie filling over top.
  2. In a small bowl, place remaining cake mix, cut in butter until crumbly, sprinkle over filling.
  3. Bake at 350º for 35 to 40 minutes or until lightly browned.
  4. Cool on wire rack
Drizzle with Glaze



Vanilla Glaze

Ingredients
  • 1 cup confectioners' sugar
  • 1 tablespoon corn syrup (white)
  • 1 to 2 tablespoons milk
Cooking Directions
  1. Combine confectioners sugar, corn syrup and milk. Stir until reach desired consistency.
  2. Drizzle over cake.
