Chocolate Zucchini Cake

Ingredients
  • 1 cup butter, softened
  • 1/2 cup vegetable oil
  • 1 1/2 cups sugar
  • 2 eggs, lightly beaten
  • 1/2 cup buttermilk
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1/4 cup baking cocoa
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon each ground cloves and allspice
  • 2 cup shredded zucchini, thawed if frozen
  • 1/2 cup chopped nuts
  • 1/2 cup semisweet mini chocolate chips
Cooking Directions

  1. In a mixing bowl, beat the butter, oil, and sugar. Add the eggs, buttermilk and vanilla; mix well. Combine the flour, cocoa, baking soda, baking powder, salt, cinnamon, cloves and allspice; gradually add to creamed mixture. Mix together well. Stir in zucchini.
  2. Spread batter into a greased 13 x 9 inch baking pan. Sprinkle with nuts and mini chocolate chips. Bake at 350º for 35 to 40 minutes or until a toothpick inserted near the center comes out clean. Cool on wire rack.
