Pink Squirrel Cupcakes

On the Menu Today~
Pink Squirrel Cupcakes 

Do you remember the Ice Cream Drink called... 
A Pink Squirrel? 
This adult ice cream drink 
is made with creme de cacao, creme de almond and 
vanilla ice cream. 
It's a delicious after dinner "shake"
  "The Pink Squirrel" 
gets it's "pink" color from the creme de almond.  
These cupcakes are in honor of that drink...

Pink Squirrel Cupcakes

Ingredients
  • 1 box funfetti cake mix
  • 3 eggs
  • 1/3 cup oil
  • 1/2 cup water
  • 2 tablespoons creme de almond liqueur or 1/2 teaspoon almond flavoring
  • 2 tablespoons creme de cacao or 1/2 teaspoon chocolate flavoring
  • 24 cupcake liners
  • 1 container funfetti vanilla frosting
  • 1 teaspoon almond flavoring
  • 2 drops red food coloring
  • silver dragees, #5
  • 18 creme de pirouline artisan rolled wafers
Cooking Directions
  1. Preheat oven to 350º Line muffin tin with paper liners, set aside.
  2. Blend cake mix, eggs, oil, water, creme de almond or almond flavoring, creme de cacao or chocolate flavoring in a large bowl until moistened. Beat with a mixer on medium speed for 2 minutes. Fill cupcake liners 2/3 full.
  3. Bake at 350º for 18 to 20 minutes or until toothpick inserted in center comes out clean.
  4. Remove cupcakes to wire rack, cool completely. Frost when cool.
  5. For Frosting: 
  6. In medium bowl stir until combined, container of frosting, 1 teaspoon almond extract and 2 drops red food coloring. 
  7. Frost cupcakes and decorate with dragees and de Pirouline rolled wafers.
