Apple Cider Spice Donuts

Apple Cider Spice Donuts


Nothing is better than reading the newspaper,
early on a Saturday morning,
while eating a warm homemade doughnut,
dunked into a cup of hot coffee.
Delicious!
 

Apple Cider Spice Donuts
Ingredients
  • 2/3 cup packed brown sugar
  • 2 eggs
  • 1 teaspoon apple pie spice
  • 1/2 teaspoon salt
  • 1/4 teaspoon each: ground nutmeg, allspice, and cloves
  • 6 tablespoons butter, melted and cooled
  • 1 cup apple cider
  • 3 cups all-purpose flour
  • 1/2 cup whole wheat flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
Cooking Directions
  1. In a large mixing bowl, beat packed brown sugar, eggs, salt and spices. Beat until thick, about 3 to 5 minutes. Gradually beat in the cooled melted butter, then beat in the apple cider.
  2. Combine flours, baking powder and baking soda. Add to batter, beat just until blended. Cover and refrigerate 1 hour. Divide dough in half. 
  3. Turn dough onto a lightly floured surface, pat into 1/2 inch thickness, cut with a floured 2-1/2 inch doughnut cutter, repeat with remaining dough. 
  4. In an electric skillet or deep-fat fryer, heat oil to 375 degrees. 
  5. Fry doughnuts, 2 or 3 at a time, for 2 minutes per side or until golden brown. Drain on paper towels 
  6. Sprinkle with powdered sugar or cinnamon-sugar.
