Chicken with Peppers and Tomatoes
Ingredients
- 2 tablespoons olive oil
- 6 mini sweet peppers, sliced
- 1 small onion, sliced
- 1 clove garlic, minced
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 4 boneless, skinless chicken breasts
- 1/4 cup chicken broth
- 1/2 teaspoon dried oregano
- 1 teaspoon dried basil
- 2 tablespoons tomato paste
- 1 (28 oz) can diced tomatoes
- 1 cup white wine or water
- In a large skillet over medium heat, sauté peppers, onion and garlic in olive oil for 5 to 7 minutes. Season with salt and pepper. Add chicken breasts, brown 5 minutes, turn over and brown an additional 5 minutes. Stir in chicken broth. Remove pan from heat and set aside.
- In a 5 quart slow cooker, combine remaining ingredients. Add chicken/pepper mixture. Cook on low for 4 to 6 hours.
- Stovetop directions:
- In a large skillet, over medium heat, saute' peppers, onion and garlic in olive oil for 5 to 7 minutes. Season with salt and pepper. Add chicken breasts, brown 5 minutes, turn over and brown another 5 minutes. Stir in chicken broth, heat to a boiling, reduce heat to medium low. Sprinkle chicken with oregano and basil. Stir in tomato paste, diced tomatoes and white wine or water. Cover, simmer for 30 to 45 minutes or until chicken is tender and no longer pink inside.
