Ham and Cheese Pasta Salad
Ingredients
- 1 pound package pasta such as: elbow, fusilli, gemelli, rotelle, cavatappi, or radiatore
- 2 carrots, peeled and shredded
- 1/4 cup shredded onion
- 1/4 cup diced celery
- 2 1/4 cups mayonnaise
- 1/4 cup milk
- 2 tablespoons sugar
- 2 tablespoons apple cider vinegar
- 2 tablespoons Dijon mustard
- salt and pepper, to taste
- 1 1/2 cups diced cooked ham
- 1 cup diced sharp cheddar cheese
- Cook pasta according to package directions. Drain and rinse under cold running water, drain again. In a large bowl toss together pasta, shredded carrots, onion and celery.
- In a small bowl, whisk together mayonnaise, milk, sugar, apple cider vinegar, mustard, salt and pepper. Add ham, cheddar cheese and mayonnaise mixture to carrots, onion and celery.
- Toss gently together. Refrigerate one to two hours before serving.
