Pumpkin Chocolate Chip Sunflower Seed Bread

Pumpkin Chocolate Chip Sunflower Seed Bread

Ingredients
  • 1 1/2 cups flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup canned solid packed pumpkin
  • 1/3 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon pumpkin pie spice
  • 1 1/4 cups plus 1 teaspoon sugar
  • 1/2 cup mini chocolate chips
  • 1/4 cup unsalted sunflower seeds
Cooking Directions
  1. Preheat oven to 350º
  2. Lightly grease and flour a 9 x 5 inch loaf pan.
  3. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  4. In another medium bowl, whisk together pumpkin, oil, eggs, pumpkin pie spice and 1 1/4 cups sugar. Using a spatula fold flour mixture into pumpkin mixture. Stir just until combined. Gently fold in mini chocolate chips. Pour batter into prepared pan.
  5. Sprinkle top of bread with sunflower seeds.
  6. Sprinkle 1 teaspoon sugar over sunflower seeds.
  7. Bake at 350 degrees for 45 to 50 minutes or until a toothpick inserted in center comes out clean. Remove from oven.
  8. Cool in pan on wire rack for 5 minutes.
  9. Remove bread from pan.
  10. Cool bread completely on wire rack.



Pumpkin Pie Spice

Ingredients
  • 1/8 teaspoon ground nutmeg
  • 1/8 teaspoon ground cloves
  • 1/8 teaspoon ground ginger
  • 1/8 teaspoon ground allspice
  • 1/4 teaspoon ground cinnamon
Cooking Directions
  1. Mix all spices together.
  2. Store mixture in an air-tight container.
