Avocado and Orange Salad with Sweet Balsamic Vinaigrette

Candied Pecans



Avocado and Mandarin Orange Salad with
Sweet Balsamic Vinegar Dressing..
Is a delicious and fruity salad.
This recipe makes two large salads.
Enjoy!!




Avocado and Orange Salad

Ingredients
  • one bag salad mix of your choice
  • 1/4 cup thinly sliced red onion
  • 2 ripe avocados, peeled and sliced
  • 1 (10 oz) can mandarin oranges, drained
  • 1/2 cup candied pecans*
  • 1/2 cup olive oil
  • 1/4 cup balsamic vinegar
  • 1 teaspoon honey
  • 1 teaspoon Dijon mustard
  • 1 shallot, minced
  • 1 clove garlic, minced
  • salt and pepper to taste
Cooking Directions
  1. In a small bowl whisk together all salad dressing/vinaigrette ingredients, set aside.
  2. Divide salad mix between 2 plates.
  3. Top with sliced red onions, sliced avocados, mandarin oranges and pecans.
  4. Drizzle with sweet balsamic vinaigrette.



*Candied Pecans

Ingredients
  • 1/2 cup sugar
  • 1/2 cup brown sugar, packed
  • 1 tablespoon ground cinnamon
  • 1 teaspoon salt
  • 1/8 teaspoon cayenne pepper
  • 4 cups pecan halves, unsalted
  • 1 egg white, whisked
Cooking Directions
  1. Preheat oven to 300 degrees.
  2. In a large bowl combine sugar, brown sugar, cinnamon, salt and cayenne pepper.
  3. Toss or whisk until evenly combined. Set aside.
  4. In a separate bowl, add pecans and egg white, gently toss until combined and evenly coated.
  5. Add the sugar mixture and toss until combined.
  6. Spread the mixture out in a single layer on a parchment lined baking sheet (Use 2 baking sheets if necessary)
  7. Bake for 40 to 50 minutes, stirring every 20 minutes. Remove from the oven.
  8. Let cool on cooling rack until nuts reach room temperature.
Store in an air-tight container
