Avocado and Orange Salad with Sweet Balsamic Vinaigrette
Sweet Balsamic Vinegar Dressing..
Is a delicious and fruity salad.
This recipe makes two large salads.

Ingredients
- one bag salad mix of your choice
- 1/4 cup thinly sliced red onion
- 2 ripe avocados, peeled and sliced
- 1 (10 oz) can mandarin oranges, drained
- 1/2 cup candied pecans*
- 1/2 cup olive oil
- 1/4 cup balsamic vinegar
- 1 teaspoon honey
- 1 teaspoon Dijon mustard
- 1 shallot, minced
- 1 clove garlic, minced
- salt and pepper to taste
- In a small bowl whisk together all salad dressing/vinaigrette ingredients, set aside.
- Divide salad mix between 2 plates.
- Top with sliced red onions, sliced avocados, mandarin oranges and pecans.
- Drizzle with sweet balsamic vinaigrette.
*Candied Pecans
Ingredients
- 1/2 cup sugar
- 1/2 cup brown sugar, packed
- 1 tablespoon ground cinnamon
- 1 teaspoon salt
- 1/8 teaspoon cayenne pepper
- 4 cups pecan halves, unsalted
- 1 egg white, whisked
- Preheat oven to 300 degrees.
- In a large bowl combine sugar, brown sugar, cinnamon, salt and cayenne pepper.
- Toss or whisk until evenly combined. Set aside.
- In a separate bowl, add pecans and egg white, gently toss until combined and evenly coated.
- Add the sugar mixture and toss until combined.
- Spread the mixture out in a single layer on a parchment lined baking sheet (Use 2 baking sheets if necessary)
- Bake for 40 to 50 minutes, stirring every 20 minutes. Remove from the oven.
- Let cool on cooling rack until nuts reach room temperature.
Store in an air-tight container
