Latin-Style Slow Cooker Chicken Stew

Ingredients
  • 1 (15 oz) can tomato sauce
  • 2 teaspoons chicken bouillon (caldo con sabor de pollo)
  • 1 1/2 pounds boneless, skinless chicken thighs
  • 1 pound small red-skinned potatoes, quarted
  • 2 cups baby carrots
  • 1 cup chopped green bell pepper
  • 2 tablespoons chopped garlic
  • 1/4 teaspoon ground black pepper
Cooking Directions
  1. Spray inside of 4-quart slow cooker with cooking spray. Stir together tomato sauce and bouillon in slow cooker. Add remaining ingredients, except black pepper; stir to combine.
  2. Cover; cook on LOW 8 hours or on HIGH 4 hours or until chicken and vegetables are tender. Sprinkle with black pepper; stir before serving.

Cook's Tips
For extra flavor, stir in 1/4 cup sliced green olives with the black pepper.
