Meatball Sandwich
Ingredients
- For Meatballs:
- 16 ounces lean ground beef
- 8 ounces sweet Italian sausage
- 1/3 cup (dry) Italian bread crumbs
- 2 tablespoons ketchup
- 1/4 teaspoon garlic powder
- 1/8 teaspoon each salt and pepper
- 1/4 cup minced onions
- 1/4 cup finely chopped green pepper
- 2 cloves garlic, minced
- 1 egg
- 2 tablespoons oil
- For the Sauce:
- 1 small onion, chopped
- 1/3 cup chopped sweet green pepper
- 2 (8 oz each) cans tomato sauce
- 1 (14.5 oz) can stewed tomatoes, (Italian style)
- 1 cup of your favorite spaghetti sauce
- 1 teaspoon dried basil leaves
- 1 teaspoon dried oregano
- 1 teaspoon dried Italian seasoning
- salt and pepper, to taste
- 4 to 6 Italian rolls, each 7 inches long
- 2 to 4 cups shredded mozzarella cheese
- Parmesan cheese, to sprinkle on top
- To prepare the meatballs:
- In a large bowl, mix the ground beef, Italian sausage, bread crumb, ketchup, garlic powder, salt, pepper, onion, green pepper, garlic, and egg Mix together and form into 16 to 20 meatballs. Heat 2 tablespoons oil in a large skillet over moderate heat. Add the meatballs and cook for 10 to 15 minutes or until browned, turning occasionally. Remove the meatballs. Set aside. Drain off fat.
- To prepare sauce:
- In the same skillet, combine the onion and green pepper, cook over moderately high heat until vegetables are tender. Stir in the tomato sauce, tomatoes, spaghetti sauce, basil, oregano, Italian seasoning, salt and pepper. Return the meatballs to skillet. Bring to a boil. Lower heat and simmer, covered, for 10 minutes more or until the meatballs are no longer pink on the inside and the sauce mixture is thickened
- Preheat the broiler
- With a serrated knife, cut a thin slice from the top of each roll and discard. Hollow out the rolls. Spoon the meatballs and the sauce into the rolls, sprinkle with the shredded mozzarella cheese and Parmesan cheese.
- Broil the sandwiches 4 inches from the heat for 1 minute or until the cheese melts.
- Makes 4 to 6 servings
