Hearts of Palm Salad

Ingredients
  • 1/4 cup canola oil
  • 2 tablespoons cider vinegar
  • 2 tablespoons chopped fresh cilantro
  • 1 tablespoon line juice
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground black pepper
  • 1 (14.5 oz) can diced tomatoes, drained
  • 1 (14.8 oz) jar hearts of palm, drained and sliced
  • 1 avocado, pitted, peeled and chopped
  • 2 tablespoons thinly sliced red onion
Cooking Directions
  1. Whisk together oil, vinegar, cilantro, lime juice, salt and pepper in medium bowl until blended.
  2. Add drained tomatoes, hearts of palm, avocado and onion to bowl. Stir gently to combine. Serve immediately.
