Penne with Artichokes
Time to dust off those pasta recipes...
the weather is getting warmer and
it's going to get hot, hot hot~
Pasta salads and summer just go together in my book.
When it's hot outside and you don't know what your hungry for,
a delicious, cool pasta salad always hits the spot.
Penne with Artichokes
Ingredients
- 1 jar (12 oz) quartered artichoke hearts
- 5 cloves garlic, minced
- 2 tablespoons olive oil
- 2 ounces sun-dried tomatoes in oil
- 1 teaspoon red pepper flakes
- 2 tablespoons chopped fresh flat leaf parsley
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 cup chicken broth, white wine or water
- 1 tablespoon grated Parmesan cheese
- 12 ounces tri colored penne pasta, cooked, drained and hot
- Cook and stir the 5 garlic cloves in 1 1/2 tablespoons oil in large skillet over medium-high heat until golden. Reduce heat to low.
- Add artichokes and tomatoes; simmer 1 minute. Stir in red pepper flakes, salt, pepper and chicken broth, white wine or water. Simmer 5 minutes.
- Pour artichoke mixture over penne in a large bowl; toss gently to coat. Sprinkle with parsley and Parmesan cheese.
