{Warm} Turkey Fiesta Dip

{Warm} Turkey Fiesta Dip


What a great and delicious way to use
left-over turkey...don't have left-over turkey??
No worries....use a rotisserie chicken....
a nice and easy alternative.






We enjoyed our Thanksgiving Dinner at noon today for two reasons...
1.) I had this dip in mind and
2.) The Green Bay Packers play the Chicago Bears tonight!!

My dishes are done,
the kitchen is picked up and
this dip is ready to pop into the oven...

Turkey Fiesta Dip is a tasty way to use up left-over Thanksgiving turkey.
Make this tasty dip...
watch your favorite football game or
your favorite holiday special.
This delicious dip is great for any occasion...
it's that good!



{Warm} Turkey Fiesta Dip

Ingredients
  • 1 medium green pepper, chopped
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon oil
  • 1 teaspoon chili powder
  • 1/4 teaspoon each salt and pepper
  • 1/2 teaspoon ground cumin
  • 4 ounces (McCormick) taco chipotle and garlic skillet sauce or
  • 4 ounces salsa of your choice
  • 1 (8 oz) package cream cheese, room temperature
  • 1/4 cup mayonnaise
  • 1 (10 3/4 oz) can condensed cream of chicken soup, undiluted
  • 1 (10 oz) can diced tomatoes with green chilies, drained
  • 1 (4 oz) can diced green chilies, drained
  • 4 cups shredded cooked turkey or chicken
  • 2 cups shredded Mexican cheese blend, divided
  • 1 green onion, thinly sliced
  • corn chips or tortilla chips
Cooking Directions
  1. In a large skillet, saute' green pepper, onion and garlic in oil until tender. Add the chili powder, salt, pepper, and cumin; cook 1 minute longer. Add the chipotle and garlic skillet sauce or salsa and heat for 5 minutes. Remove from heat and set aside.
  2. In a large bowl, beat cream cheese and mayo until smooth. Add the soup, tomatoes and diced green chilies. Stir in the turkey, 1 cup cheese blend and green pepper mixture.
  3. Transfer to a greased 11 x 7 inch baking dish.
  4. Sprinkle with green onions and remaining cheese blend.
  5. Bake uncovered at 350º for 25 to 30 minutes or until bubbly. 
  6. Let stand for 5 minutes. Serve with corn chips or tortilla dippers.
