{Warm} Turkey Fiesta Dip
Ingredients
- 1 medium green pepper, chopped
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon oil
- 1 teaspoon chili powder
- 1/4 teaspoon each salt and pepper
- 1/2 teaspoon ground cumin
- 4 ounces (McCormick) taco chipotle and garlic skillet sauce or
- 4 ounces salsa of your choice
- 1 (8 oz) package cream cheese, room temperature
- 1/4 cup mayonnaise
- 1 (10 3/4 oz) can condensed cream of chicken soup, undiluted
- 1 (10 oz) can diced tomatoes with green chilies, drained
- 1 (4 oz) can diced green chilies, drained
- 4 cups shredded cooked turkey or chicken
- 2 cups shredded Mexican cheese blend, divided
- 1 green onion, thinly sliced
- corn chips or tortilla chips
- In a large skillet, saute' green pepper, onion and garlic in oil until tender. Add the chili powder, salt, pepper, and cumin; cook 1 minute longer. Add the chipotle and garlic skillet sauce or salsa and heat for 5 minutes. Remove from heat and set aside.
- In a large bowl, beat cream cheese and mayo until smooth. Add the soup, tomatoes and diced green chilies. Stir in the turkey, 1 cup cheese blend and green pepper mixture.
- Transfer to a greased 11 x 7 inch baking dish.
- Sprinkle with green onions and remaining cheese blend.
- Bake uncovered at 350º for 25 to 30 minutes or until bubbly.
- Let stand for 5 minutes. Serve with corn chips or tortilla dippers.
