Apple Dutch Baby

Ingredients
  • 3 large eggs, room temperature
  • 3/4 cup whole milk
  • 3/4 cup flour
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 2 tablespoons butter
  • 1 cup apple pie filling
  • maple syrup, optional
Cooking Directions
  1. Preheat oven to 425º
  2. Whisk eggs, milk, flour, vanilla, salt and cinnamon in a medium bowl until smooth. Heat a 10" cast iron skillet in the oven until very hot, 8 to 10 minutes.
  3. Place apple pie filling in a medium glass bowl. Heat in the microwave on high for 60 seconds. Stir. Remove cast iron skillet from oven. Carefully add butter to skillet, tilting to coat bottom and sides of cast iron skillet.
  4. Add apple pie filling to center of skillet, pour batter over apple pie filling.
  5. Bake until pancake is puffed and golden brown around the edges and center is set but still has a custard-like consistency, about 12 to 15 minutes.
Drizzle with maple syrup if desired.
