Hot Turkey Sandwiches

Try this recipe for delicious hot turkey sandwiches...
made in your slow-cooker.





About 25 years ago,
I attended an outdoor wedding.
A picnic style wedding really...
where the brides family made all the food that was served.

When I tasted these delicious sandwiches,
I knew I had to have the recipe.
I went on a mission to find out who made these sandwiches...
but no one at the wedding knew who made the sandwiches.
Darn it!

A few days later,
I received the recipe in the mail with a short note attached.
The recipe came from the brides grandmother..
who owned a restaurant for over 40 years.
Her grandma served Hot Turkey Sandwiches,
Open-face style,
Every Tuesday for $1.00...
as a Blue-Plate Special.
I have been making these sandwiches ever since....


Hot Turkey Sandwiches have made an appearance at:
Graduation parties, Birthday parties, Retirement parties,
First communion, Baptisms, Super Bowl Parties and
Just for the heck of it!

You can use left-over holiday turkey or
you can purchase a turkey,
make the turkey in an oven bag and
use all the turkey with the drippings
to make the sandwiches.





Turkey Sandwiches

Ingredients
  • 8 to 12 cups cooked left-over holiday turkey, chopped (use both white and dark meat)
  • 1 small onion, diced
  • 3 stalks celery, diced
  • 2 cans cream of chicken soup*
  • 1 can cream of celery soup*
  • 1 1/2 cups turkey broth*
  • 2 small containers concentrated turkey home-style stock (sometimes called: flavor enhancer)
  • 1/4 teaspoon poultry seasoning
  • 1/4 teaspoon ground sage
  • 1/4 teaspoon each salt and pepper
  • 1/4 teaspoon thyme leaves
  • buns or rolls of your choice
Cooking Directions
  1. Combine all ingredients in a 5 quart slow cooker.
  2. Turn to low and cook for 5 to 6 hours.
Serve with buns of your choice

*Depending on how much turkey you have left-over,
you may need to add an extra can of soup and/or an extra cup of turkey broth*
*Can be made ahead and re-heated in slow cooker*
*Can also be frozen for later*
*Purchase an extra turkey when they're on sale and
make an extra batch of these delicious turkey sandwiches.



How to Roast a Turkey using an Oven Bag

Ingredients
  • 14 to 18 pound turkey, fresh or frozen, thawed if frozen
  • 2 to 4 tablespoons flour
  • one oven roasting bag
Cooking Directions
  1. Add 2 to 4 tablespoons flour to oven bag. Shake bag and pour out excess flour. Remove turkey from wrapper. Clean turkey under running water. Discard turkey neck and gizzards or save for another use. Place turkey in oven bag, seal with twist tie from oven bag box. Using a sharp knife, make 5 small slits in bag. Place turkey in large roasting pan.
  2. Bake at 350º for 3 to 4 hours or follow directions on oven bag box.
  3. Remove turkey from oven, remove turkey from oven bag, cool. Save turkey drippings from bag, carefully pour drippings into a large bowl. Discard bag.
  4. When turkey is cool enough to handle remove all white and dark meat. Discard bones or freeze bones for later use. (to make turkey stock) Dice white and dark meat.
  5. Combine all ingredients in a 5 quart slow cooker.
  6. Turn to low, cook 5-6 hours.
