Dried Beef & Cream Cheese Log~
Great old-fashioned recipe for pretzels,
buttery crackers and celery sticks.
Dried Beef and Cream Cheese Log
Ingredients
- 1 (8 oz) package cream cheese, room temperature
- 1/4 cup mayonnaise (Hellman)
- 1 teaspoon prepared horseradish, drained
- 1/2 cup shredded Swiss cheese
- 2 ounces dried beef, finely chopped
- 1 tablespoon chopped pimientos, drained
- 1/2 cup finely chopped green onion tops
- pretzels, buttery crackers, celery sticks and/or melba toast slices for serving
- In a small bowl, with an electric mixer on high, beat cream cheese, mayonnaise, and horseradish until creamy. Stir in Swiss cheese, dried beef, and pimientos. Shape the mixture into two-4 inch long logs. Wrap logs in plastic wrap and refrigerate for at least 2 hours. (Mixture will keep in the refrigerator, wrapped for 2 days)
- Spread chopped green onion tops on a sheet of waxed paper. Unwrap the logs and carefully roll logs in chopped green onion tops, coating logs completely. Rewrap logs in plastic wrap and refrigerate until ready to serve.
