Enchiladas Verdes

Ingredients
  • 2 tomatillos
  • 1/2 cup chopped onion
  • 4 teaspoons chili powder
  • 2 cloves garlic, minced
  • 2 tablespoons oil
  • 1 can cream of chicken soup
  • 1/2 cup salsa verde
  • 1 (4 oz) can chopped green chilies, drained
  • 1 (4 oz) jar diced pimientos, drained
  • 1/2 cup sour cream
  • 12- 6 inch corn tortillas
  • 3 cups cooked chicken cubed
  • 1 (10 oz) can salsa de chiles verdes, (green enchilada sauce)
  • 2 cups shredded Mexican-style cheese
  • 2 green onions, sliced
  • chopped cilantro and/or toppings of your choice
Cooking Directions
  1. Prepare tomatillos:
  2. Remove and discard the thin, brown papery husk from the tomatillos. Rinse tomatillos. Finely chop, should have a 1/2 cup.
  3. For sauce:
  4. In a medium saucepan, cook chopped tomatillos, onion, chili powder and garlic in hot oil over medium heat until vegetables are tender. Remove from heat and stir in soup, salsa, chopped green chilies, pimientos, and sour cream. Stir in cooked cubed chicken.
  5. Spread 1/2 can of enchilada sauce in the bottom of a 3-quart rectangle baking dish.
  6. Put a 1/4 cup of chicken mixture on one end of each tortilla and roll up. Lay filled tortillas seam side down on sauce. Continue with remaining chicken mixture and tortillas. Pour remaining enchilada sauce over filled tortillas. Sprinkle with cheese.
  7. Bake covered at 350º for 45 minutes. Remove cover. Cook another 15 minutes or until bubbly and cheese is melted. Let stand 5 minutes before serving.
  8. Garnish with green onions, cilantro and toppings of your choice

Dulce de Leche Krispy Treats

Ingredients
  • 3 tablespoons butter
  • 1 (10 oz) package or about 40 vanilla and caramel marshmallows or regular marshmallows
  • 1/4 cup canned dulce de leche
  • 6 cups cocoa puffs cereal
  • 2 to 4 tablespoons dulce de leche for drizzle, optional
Cooking Directions
  1. Over medium-low heat, melt the butter in a large saucepan, add the marshmallows, stirring constantly until melted. When marshmallows are melted, add the dulce de leche, stir until combined. Add cereal, stir until well coated. Pour into a buttered 13 x 9 inch pan. Press into pan with buttered spatula
  2. Cool. Drizzle with dulce de leche, optional

Ingredients
  • 3/4 cup ground dark roast coffee
  • 2 teaspoons ground cinnamon
  • 6 cups water
  • 1 cup milk
  • 1/3 cup chocolate syrup
  • 2 tablespoons light brown sugar
  • 1 teaspoon vanilla extract
  • whipped topping, garnish
  • ground cinnamon, garnish
Cooking Directions
  1. Place coffee and cinnamon in basket of coffeemaker. Add water to coffeemaker; brew as directed. Simmer milk, chocolate syrup and sugar in a small saucepan on low heat until sugar dissolves. Stir milk mixture and vanilla into brewed coffee.
  2. Pour into serving cups. (6)
