Chicken-Apple-Beet Salad

balanced out by the milder flavor of antioxidant-rich beets,
while pecan halves and romaine lettuce add texture.

Chicken Apple Beet Salad
Ingredients
- 1/2 cup orange ginger stir fry sauce/marinade (La Choy)
- 1/4 cup apple juice
- 8 cups chopped romaine lettuce
- 2 (6 oz each) packages refrigerated diced oven roasted chicken breast
- 1 large granny smith apple, unpeeled and diced
- 1 (14 1/2 oz) can julienne or sliced beets, drained
- 1/2 cup pecans
- Stir together stir fry sauce and juice in small bowl for dressing; set aside.
- Divide lettuce between 6 serving plates. Top evenly with remaining ingredients. Drizzle with dressing.
A slice of good French bread or a multigrain roll would accompany this dish well.
