Chicken Apple Beet Salad

Chicken-Apple-Beet Salad

This Chicken-Apple-Beet Salad 
has the tang of Granny Smith apples 
balanced out by the milder flavor of antioxidant-rich beets, 
while pecan halves and romaine lettuce add texture. 
The chicken breast is a great source of lean protein in this salad.

Chicken Apple Beet Salad

Ingredients
  • 1/2 cup orange ginger stir fry sauce/marinade (La Choy)
  • 1/4 cup apple juice
  • 8 cups chopped romaine lettuce
  • 2 (6 oz each) packages refrigerated diced oven roasted chicken breast
  • 1 large granny smith apple, unpeeled and diced
  • 1 (14 1/2 oz) can julienne or sliced beets, drained
  • 1/2 cup pecans
Cooking Directions
  1. Stir together stir fry sauce and juice in small bowl for dressing; set aside.
  2. Divide lettuce between 6 serving plates. Top evenly with remaining ingredients. Drizzle with dressing.

You could try adding goat cheese to this salad, too. 
A slice of good French bread or a multigrain roll would accompany this dish well.
